Ginger and Almond BiscottisOne of the things I like the most about Christmas time, are the cookies. And if they are packed with species, even better. For some time ago, I have been dreaming about baking some biscottis, and finally I found the time. I decided to prepare these cookies with a combination of ginger and almond.

Una de las cosas que más me gusta de la época navideña, son las galletas. Y si están llenas de especias, mucho mejor. Desde hace tiempo tenía ganas de preparar unos biscottis, y por fin encontré el mejor momento. Decidí hacer una combinación de jengibre con almendras. Ginger and Almond BiscottisWhen we were kids, my mom used to prohibit us to soak any type of bread or cookie into our milk, she said it was very rude. When I grew up, I discovered biscottis and I liked the idea that they are traditionally serve with a drink and they are designed to be soaked.

Cuando éramos chicos, mi mamá nos tenía prohibido remojar cualquier tipo de pan o galleta en la leche, nos decía que era de muy mala educación. Después, de grande, conocí los biscottis y me encantó la idea de que se sirven acompañados de una bebida y casi casi,  están diseñados para ser remojados.  Ginger and Almond BiscottisThe biscottis originated in Italy, and the meaning of the word is “twice cook or bake”. In the old days, the way biscottis are prepared, served so the cookies remained really dry and they could be stored for long periods of time. Today they are served with coffee, tea or wine, so when they are soaked, they become softer. 

El origen de los biscottis es italiano, y significa “dos veces cocinado u horneado”. En la antigüedad, el método de preparación con el que se hacen los biscottis, servía para que las galletas quedaran muy secas y se pudieran almacenar por largos periodos. Hoy en día se sirven acompañados de café, té o vino, así que cuando los remojas, se vuelven más suaves. Ginger and Almond Biscottis
These biscottis have an intense ginger flavor. I added fresh ginger to the sugar, then I mixed ground ginger with the flour, and at the end I added chopped crystallized ginger. Since I discovered that I could buy crystallized ginger in the oriental shops, at a lower price than at the bakery shops, I have been using it more in my dishes.

Son unos biscottis con un sabor intenso a jengibre. Les añadí jengibre fresco a la azúcar, después mezcle jengibre en polvo con la harina y por último le añadí trozos de jengibre cristalizado. Desde que descubrí que las tiendas orientales venden jengibre cristalizado a un precio mucho más barato que las tiendas de repostería, lo utilizo más en mis platillos. Ginger and Almond BiscottisI loved the mixture of flavors; the nutty flavor from the almonds with the spiciness of the ginger. And if you soaked them in a cup of coffee with milk, they are delicious. Although biscottis are designed to last for a long time, I think in my house these ginger and almond biscottis, will last for just a few days.

Me encanto la mezcla de sabores;  el sabor típico de las almendras con el picante del jengibre. Y si los remojas en un café con leche quedan deliciosos. Aunque los biscottis están diseñados para que duren mucho tiempo, creo que en mi casa estos biscottis de jengibre y almedra duraran máximo unos días.

For the biscottis
  1. 3 cm (1.18 in) fresh ginger, peeled and grated
  2. 150 grams (5.29 oz) moscavado sugar
  3. 112 grams (3.95 oz) unsalted butter
  4. 2 Tablespoons molasses
  5. 1 teaspoon vanilla
  6. 2 eggs
  7. 320 grams (11.28 oz) all-purpose flour
  8. 2 teaspoons powdered ginger
  9. ½ teaspoon baking powder
  10. 1/8 teaspoon salt
  11. 2/3 cups crystallized ginger
  12. 1 cup almonds, toasted and sliced
For the topping
  1. 1 egg
  2. ½ cup sugar
Instructions
  1. Preheat the oven to 180°C (350°F). Prepare two baking sheets with parchment paper or silicon mats.
  2. Grate the fresh ginger over the sugar. Mix well.
  3. In a stand mixer with the paddle attachment, cream the butter with the sugar until light and fluffy. Add the molasses and the vanilla. Add the eggs, one by one, mix until combined.
  4. In a medium sized bowl, sift the flour, ground ginger, baking powder and salt. At low speed, add the dry ingredients to the butter-egg mixture, mix until well blended. Mix in the crystallized ginger and almonds.
  5. Divide dough evenly in two halves. Using floured hands, shape each dough half into a wide log, 20 x 30 centimeters (8 x 12 in). Transfer both logs to prepared sheets. In a small bowl, whisk the egg, brush on top and sides of each dough. Sprinkle with sugar.
  6. Bake for 20-25 minutes or until lightly browned. Cool for 10 minutes. Maintain the oven temperature. Using a serrated knife, cut the logs crosswise into 1.5 cm (1/2 in) thick slices. Arrange the biscottis, cut side down, on the same baking sheet. Bake for 10 minutes. Turn biscotti over and bake for 10 more minutes. Transfer to a wire rack and let cool completely.

Para los biscottis
  1. 3 cm (1.18 in) jengibre fresco, pelado y rallado
  2. 150 gramos (5.29 oz) azúcar moscabado
  3. 112 gramos (3.95 oz) mantequilla sin sal
  4. 2 Cucharadas de melaza
  5. 1 cucharadita de vainilla
  6. 2 huevos
  7. 320 gramos (11.28 oz) harina
  8. 2 cucharaditas jengibre en polvo
  9. ½ cucharadita polvo para hornear
  10. ⅛ cucharadita sal
  11. ⅔ taza jengibre cristalizado
  12. 1 taza de almendras, tostadas y en rebanadas
Para el brillo
  1. 1 huevo
  2. ½ taza de azúcar
Instructions
  1. Precalentar el horno a 180° C (350° F). Preparar dos charolas para hornear con papel encerado o tapetes de silicón.
  2. Rallar el jengibre fresco sobre el azúcar. Mezclar bien.
  3. En una batidora, con el accesorio de la pala, acremar la mantequilla con el azúcar hasta que esté suave y esponjosa. Añadir la melaza y la vainilla. Añadir los huevos, uno por uno, mezclar hasta que se incorporen.
  4. En un tazón mediano, cernir la harina, el jengibre en polvo, polvo de hornear y la sal. A baja velocidad, agregar los ingredientes secos a la mezcla de mantequilla y huevo, batir hasta que estén bien mezclados. Agregar el jengibre cristalizado y las almendras.
  5. Dividir la masa en dos mitades del mismo tamaño. Con las manos enharinadas, formar dos rectángulos anchos, 20 x 30 cm (8 x 12 pulgadas). Colocar cada rectángulo en una charola. En un recipiente pequeño, batir el huevo, con una brocha para cocinar, esparcir el huevo en la parte superior y en los lados de cada rectángulo. Espolvorear con azúcar.
  6. Hornear durante 20-25 minutos o hasta que estén ligeramente dorados. Deje enfriar durante 10 minutos. Mantener la temperatura del horno. Usando un cuchillo de sierra, cortar los troncos transversalmente, en rodajas de 1.5 cm (1/2 pulgadas). Colocar los biscottis, la parte cortada hacia abajo, en la misma charola. Hornear durante 10 minutos. Voltear los biscottis y hornear por 10 minutos más. Transferir a una rejilla y dejar enfriar por completo.
