For some years, I had wanted to prepare the famous Bûche de Noël or Yule Log. I love how it looks, and I had always imagined that its assembly was very complicated, that’s why I was kind of scared to prepare it. Finally this year I decided to make it, and although it is a cake that takes some time, it isn’t as complicated as I imagined.

Desde hace algunos años, había querido preparar el famoso Bûche de Noël o Tronco de Navidad. Me encanta como se ve, y siempre me imagine que su elaboración era muy complicada, por eso siempre me daba miedo hacerlo. Este año por fin me decidí a prepararlo, y aunque es un pastel que se lleva su tiempo, no se me hizo tan complicado como me imaginaba. In Mexico, it is not a very popular Christmas dessert, I’ve only seen it in some bakeries and the truth is that it’s somewhat expensive. The Bûche de Noël is of French origin and can be translated as yule log, probably referring to the logs that were burned during this time to heat the homes.

En México no es un postre navideño muy conocido, sólo lo he visto en algunas pastelerías y la verdad es algo caro. El Bûche de Noël es de origen francés y se puede traducir como el tronco de Navidad, probablemente haciendo referencia a los troncos que se quemaban durante estas fechas para calentar las casas. Although there are an infinite number of combinations, I decided to make a log of pure chocolate. It is a semi-sweet chocolate sponge cake with a hint of coffee, filled with white chocolate cream and covered with dark chocolate frosting. The dream of any chocolate lover.

Aunque existen una infinidad de combinaciones, me decidí por un tronco de puro chocolate. Es un pastel esponjoso de chocolate semi-amargo con un toque de café, relleno de una crema de chocolate blanco y cubierto con un betún de chocolate oscuro. El sueño de cualquier amante del chocolate. Bûche de NoëlThe important thing when making this dessert, is the way it is cut and decorated. You have to cut the ends of the roll diagonally, and then place them on top or at the sides of the main cake, so they look like small chopped barks. Many people decorate it with meringue mushrooms, but I had no time to make them (They have to stay the whole night in the oven…).  So I just added a sprig of fresh rosemary and some red candies. I liked how it looked.

El chiste de este postre es la forma en la que se corta y se decora. Tienes que cortar los extremos del rol diagonalmente, y después colocarlos a un lado del pastel principal para que después parezcan pequeños troncos cortados. Mucha gente decora con unos hongos de merengue, pero en esta ocasión no me dio tiempo (se tienen que quedar toda la noche en el horno). Así que solo le agregue una ramita de romero y lunetas rojas. Me gustó como quedo. Once it is finished, the way it looks is amazing. I believe that you can use it as a decoration for the holiday table. And the best part is that when it’s ready to be eaten, its flavor is also very yummy. I prepared it for the Christmas dinner with my family on the 25th, and apparently they all love it.

Una vez que lo terminas, el aspecto que tiene es increíble. Yo creo que los puedes utilizar hasta de decoración para la mesa navideña. Y lo mejor es que al partirlo su sabor también es muy muy rico. Yo lo preparé para la comida navideña del 25 de diciembre con mi familia, y al parecer a todos les encanto.

For the white chocolate filling
  1. 360 ml (12.17 oz) heavy cream
  2. ½ vanilla bean
  3. 85 grams (3 oz) white chocolate
  4. ⅛ teaspoon salt
For the chocolate ganache
  1. 115 grams (4.05 oz) bittersweet chocolate, chopped
  2. ¾ cup semisweet chocolate chips
  3. 120 ml (4.06 oz) heavy cream
For the chocolate sponge cake
  1. 5 eggs, separated
  2. 3 Tablespoons brewed coffee, at room temperature
  3. 115 grams (4.05 oz) bittersweet chocolate, melted and cooled
  4. ¼ teaspoon salt
  5. 122 grams (4.30 oz) sugar
  6. 74 grams (2.61 oz) flour
  7. ¼ cup cocoa powder for dusting
For the coffee syrup
  1. ¼ cup hot brewed coffee
  2. ¼ cup sugar
For the white chocolate filling
  1. In a medium saucepan, add the heavy cream and scrape the vanilla seeds, then add the vanilla bean. Heat over medium heat until scalded, that is when small bubbles start to appear at the edges. Chopped the white chocolate and place it in a heatproof bowl. Pour the heavy cream over the chocolate, and with a rubber spatula mix until the chocolate is completely melted. Strain the mixture and add the salt. Cover with plastic wrap and refrigerate until ready to use (you can make it 2 days in advance).
For the chocolate ganache
  1. Place the chocolate in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream until scalded. Pour over the chocolate and mix with a rubber spatula until the chocolate is completely dissolved. Let cool at room temperature and store in an airtight container. (You can make up to one week in advance).
For the chocolate sponge cake
  1. Heat the oven to 180°C (350°F). Line a 33x46 cm (13x18 in) rimmed baking sheet with parchment paper, grease it.
  2. In a medium bowl, whisk the egg yolks with the coffee, chocolate and salt.
  3. In a stand mixer, fitted with the whisk attachment, beat the egg whites until soft peaks start to form, around 3-4 minutes. Add the sugar very slowly. Keep whisking until the mixture is glossy and smooth. With a rubber spatula fold 1/3 of the whites into the yolk-chocolate mixture, gently fold the remaining whites. Gently fold the flour just until fully incorporated. Pour over the prepared baking sheet.
  4. With an offset spatula, spread the batter evenly along the baking sheet, making sure that the edges are covered. Bake for 14 -16 minutes or until the top is firm and dry.
  5. Meanwhile lay a piece of parchment paper, long enough to cover the cake, on a work surface. When the cake is done, let it cool for 10 minutes. Run a knife along the edges to make sure the cake is released form the sides. Sprinkle cocoa over the entire surface. Invert the cake onto the parchment paper. Let cool for 15 minutes. Carefully peel the parchment from the bottom of the cake.
For the coffee syrup
  1. Mix the hot coffee with the sugar until completely dissolved. Brush the top surface of the cake with the syrup.
  2. In a stand mixer, fitted with the whisk attachment, whip the white chocolate filling until it hold stiff peaks. Spread over the cake leaving 2.5 cm (1 in) in all the edges. Starting at a long end, roll the cake carefully and as tight as possible. Wrap the roll tightly in plastic wrap. Freeze for 4 hours or overnight.
To assembly
  1. Remove the cake from the freezer and put into a cutting board. With a chef’s knife, trim 1 cm (1/2 in) of each end of the log. With the knife at 45°, trim 5 cm (2 in) angled pieces from each side, these will be your “barks”.
  2. Place the cake on a serving plate. Warm up the ganache. Attached the “barks” to the yule log using some softened ganache, dabbing the ganache on the flat end of each piece. You can place them at the sides or on top.
  3. With an offset spatula, spread the ganache over the yule log and the barks. Leave the spiral ends uncovered. Use a fork to make wavy wood marks on the surface of the ganache before it has set.
  4. Once it has thawed, serve immediately or store in the fridge for up to one day.
  5. Enjoy!

Para el relleno de chocolate blanco
  1. 360 ml (12.17 oz) de crema para batir
  2. ½ vaina de vainilla
  3. 85 gramos (3 onzas) de chocolate blanco
  4. ⅛ cucharadita de sal
Para el ganache de chocolate
  1. 115 gramos (4.05 oz) de chocolate semi-amargo, picado
  2. ¾ taza de chispas de chocolate semi-amargo
  3. 120 ml (4.06 oz) de crema para batir
Para el pastel de chocolate
  1. 5 huevos, separados
  2. 3 cucharadas de café preparado, a temperatura ambiente
  3. 115 gramos (4.05 oz) de chocolate semi-amargo, derretido y a temperatura ambiente
  4. ¼ de cucharadita de sal
  5. 122 gramos (4.30 onzas) de azúcar
  6. 74 gramos (2,61 oz) de harina
  7. ¼ taza de cacao en polvo para espolvorear
Para el jarabe de café
  1. ¼ taza de café caliente
  2. ¼ taza de azúcar
Para el relleno de chocolate blanco
  1. En una olla mediana, agregar la crema para batir, raspar las semillas de vainilla y a continuación, agregar la vaina de vainilla. Calentar a fuego medio hasta que la crema esta escaldada, es decir cuando pequeñas burbujas comienzan a aparecer en los bordes. Trocear el chocolate blanco y colocarlo en un recipiente resistente al calor. Vaciar la crema sobre el chocolate, y mezclar con una espátula de silicón hasta que el chocolate este derretido por completo. Colar la mezcla y añadir la sal. Cubrir con papel plástico y refrigerar hasta que se vaya a usar (se puede hacer 2 días antes).
Para la ganache de chocolate
  1. Colocar el chocolate en un recipiente resistente al calor.
  2. En una olla pequeña, calentar la crema para batir hasta escaldar. Vaciar sobre el chocolate y mezclar con una espátula de silicón hasta que el chocolate se disuelva por completo. Dejar enfriar a temperatura ambiente y guardar en un recipiente hermético. (Lo puedes preparar hacer hasta con una semana de antelación).
Para el pastel de chocolate
  1. Calentar el horno a 180° C (350° F). Forrar una charola con borde de 33x46 cm (13x18 pulgadas) con papel encerado, engrasar.
  2. En un tazón mediano, batir las yemas con el café, el chocolate y la sal.
  3. En una batidora, con el aditamento de globo, batir las claras de huevo hasta punto de turrón, alrededor de 3-4 minutos. Añadir el azúcar muy lentamente. Seguir batiendo hasta que la mezcla sea brillante y suave. Con una espátula de silicón, doblar 1/3 de las claras a la mezcla de yema-chocolate, agregar con cuidado las claras restantes. Doblar suavemente la harina hasta que esté totalmente incorporada. Verter sobre la charola de hornear.
  4. Con una espátula, extender la masa uniformemente a lo largo de la charola, asegurándose de que los bordes están cubiertos. Hornear durante 14 -16 minutos o hasta que la parte superior este firme y seca.
  5. Mientras tanto poner un pedazo de papel encerado, lo suficientemente largo para cubrir el pastel, en una superficie de trabajo. Cuando el pastel esté listo, dejar que se enfríe durante 10 minutos. Pasar un cuchillo por los bordes para asegurarse de que el pastel este suelto de los lados. Espolvorear cacao sobre toda la superficie. Invertir el pastel sobre el papel. Dejar enfriar durante 15 minutos. Con cuidado, quitar el papel de la parte inferior del pastel.
Para el jarabe de café
  1. Mezclar el café caliente con el azúcar hasta que se disuelva por completo. Cubrir la superficie superior del pastel con el jarabe.
  2. En una batidora, con el aditamento de globo, batir el relleno de chocolate blanco hasta punto de turrón. Esparcir por todo el pastel, dejando 2,5 cm (1 pulgada) en todos los bordes. A partir de uno de los lados más largos, enrollar el pastel con cuidado y apretarlo lo más posible. Envolver en en papel plástico. Congelar durante 4 horas o toda la noche.
Para el montaje
  1. Sacar el pastel del congelador y poner en una tabla para cortar. Con un cuchillo de chef, cortar 1 cm (1/2 pulgadas) de cada extremo del tronco. Con el cuchillo a 45°, cortar rebanadas angulares de 5 cm (2 pulgadas) a cada lado, estos serán sus "ramas".
  2. Colocar el pastel en un plato de servir. Calentar el ganache. Pegar las "ramas" al tronco utilizando ganache suavizado, colocándolo en el extremo plano de cada pieza. Usted puede colocarlos en los lados o en la parte superior.
  3. Con una espátula, extender el ganache sobre el tronco de navidad y las rams. Dejar los lados con las espirales sin tapar. Usa un tenedor para hacer las marcas tipo madera en la superficie de la ganache, antes de que se haya endurecido.
  4. Una vez que se haya descongelado, servir inmediatamente o almacenar en el refrigerador hasta por un día.
  5. ¡Disfrutar!
