Tangerine Sorbet – Nieve de MandarinaTangerine is one of my favorite fruits, it’s a winter citrus, so I usually cut it open and eat its wedges, and occasionally I bake a cake with them. But this time it occurred to me to prepare a tangerine sorbet. In the last couple of days, the weather in Mexico City has been very hot, just the other day I went inside my car and the temperature was 34° C! (93° F)

Una de mis frutas preferidas es la mandarina, es un cítrico de invierno, así que casi siempre me la como en gajos, y de vez en cuando horneo algún pastel con ellas. Pero está vez se me ocurrió preparar una nieve de mandarina. En los últimos días ha hecho bastante calor en el DF, el otro día me subí a mi coche y el termómetro marcaba ¡34°C! I’m invited to a family reunion this weekend, and as usual, I’m in charge of bringing the dessert, why is that? Hahaha. I’m thinking about taking a cake (I will share the recipe, I promise), and it occurred to me to have an ice cream as well, so I took advantage of the last tangerines of the season. 

Obviamente en estos días, no soy muy fanática de ponerme a hornear. Estoy invitada a una comida familiar este fin de semana, y como casi siempre, me tocará llevar el postre, ¿por qué será? Jajaja. Voy a llevar un pastel (prometo compartirles la receta después), y se me ocurrió llevar también un helado, así que aproveche las últimas mandarinas de la temporada. Tangerine Sorbet – Nieve de MandarinaI wanted it to have an intense tangerine flavor, so I used tangerine zest and juice. I did not follow any recipe, I was preparing it on the go. Before putting the mixture into the ice cream machine, I tasted it and for me, it was a little bit sour, I guess because of the zest. So I decided to add an extra ¼ cup sugar. I suggest you try the mixture before adding it to the machine, and decide the amount of sugar according to how bitter the tangerines are.

Quería que tuviera un sabor intenso a mandarina, así que utilice ralladura y jugo de mandarina. No seguí ninguna receta, lo fui haciendo sobre la marcha. Antes de poner la mezcla en la máquina de helados, lo probé y me supo un poco agrio, supongo que por la ralladura. Así que decidí agregare ¼ de taza extra de azúcar. Te recomiendo que pruebes la mezcla antes de añadirla a la máquina, y decidas la cantidad de azúcar de acuerdo a que tan agrias están las mandarinas. Tangerine Sorbet – Nieve de MandarinaI really liked the taste of this sorbet (being a fan of this fruit, I think it’s more than obvious). It has an amazing orange color, completely natural, no artificial dyes. Like most sorbets, it has a very light consistency and melts easily, so you’d have to eat fast, lol. And obviously it’s super refreshing. I will have the last verdict next Monday, after the family reunion.

Me gustó mucho el sabor de esta nieve (siendo fan de esta fruta creo que es más que obvio). Tiene un color naranja muy padre, y lo mejor es que es completamente natural, nada de colorantes. Como la mayoría de las nieves, tiene una consistencia muy ligera y se derrite muy fácil, así que te lo tienes que comer rápido, jajaja. Y obviamente es súper refrescante. Ingredients
  1. 1 cup filtered water
  2. Zest from 3 tangerines
  3. ¾ - 1 cup sugar
  4. 1 teaspoon lime juice
  5. ½ teaspoon salt
  6. 3 cups freshly squeezed tangerine juice (I used 7 tangerines)
Instructions
  1. In a small bowl, combine the water with the tangerine zest. Cover and refrigerate for one hour.
  2. Place the water and zest, in a small saucepan, add the sugar, lime juice and salt. Bring to a boil and simmer for 5 minutes or until the sugar is completely dissolved and the syrup starts to thicken. Remove from the heat and allow to cool for a while.
  3. Strain the syrup through a fine sieve, into the tangerine juice. Mix well. Refrigerate for at least 2 hours.
  4. Pour into an ice cream maker and followed the manufacturer’s directions. Transfer to a storage container and let harden in the freezer for 3-4 hours.
  5. Enjoy!

Nieve de Mandarina

Ingredients
  1. 1 taza agua filtrada
  2. Ralladura de 3 mandarinas
  3. ¾ - 1 taza azúcar
  4. 1 cucharita jugo de limón
  5. ½ cucharita sal
  6. 3 tazas de jugo recién exprimido de mandarina (aproximadamente 7 mandarinas)
Instructions
  1. En un tazón pequeño, mezcla el agua con la ralladura de mandarina. Cubre y refrigera por una hora.
  2. Coloca el agua y la ralladura, en una cacerola pequeña, agrega el azúcar, jugo de limón y la sal. Lleva a ebullición y cocina a fuego lento durante 5 minutos o hasta que el azúcar se haya disuelto completamente y el jarabe comience a espesar. Retira del fuego y deja enfriar unos minutos.
  3. Pasa el jarabe por un colador fino, y vacíalo en el jugo de mandarina. Mezcla bien. Refrigera por lo menos 2 horas.
  4. Vierta en una máquina para hacer helados y sigue las instrucciones del fabricante. Pasa a un recipiente y deja que se endurezca en el congelador durante 3-4 horas.
  5. ¡ A disfrutar!
