Peanut Butter & Jelly Doughnuts – Donas de Crema de Cacahuate y Mermelada Since I saw these donuts, I knew I had to try them. When we were kids, my mom sent us for lunch peanut butter and jam sandwiches (although I preferred peanut butter and maple syrup). It was a rare sandwich compared with those of my friends, which were almost always ham and cheese, or Nutella. In Mexico the combination of peanut butter and jelly, was not very common. I remember that it was even difficult to find peanut butter in the supermarket. I guess this has changed, and now many more Mexican children bring sandwiches with this combination.

Desde que vi estas donas, sabía que tenía que probarlas. Cuando éramos chicos, mi mamá nos mandaba de lunch, sándwiches de crema de cacahuate y mermelada (aunque yo prefería los de crema de cacahuate y miel de Maple). Era un sándwich raro comparado con los de mis amigas que casi siempre eran de jamón y queso, o Nutella. En México la combinación de crema de cacahuate y mermelada, no era muy común. Es más me acuerdo que no siempre había crema de cacahuate en el super. Supongo que esto ya ha cambiado, y ahora muchos niños llevan sándwiches con esta combinación. Peanut Butter & Jelly Doughnuts – Donas de Crema de Cacahuate y Mermelada Although it is one of my favorite combinations, I made these donuts for my husband. He’s a big fan of donuts, whenever we go to the supermarket, or someplace that has a bakery, he buys a glazed or chocolate donut. And if we pass through a Krispy Kreme, he cannot resist the temptation. I know it’s okay to eat decadent food from time to time, but I think when it comes to donuts, he exaggerates. Although this recipe is not very healthy, I think they’re better than the fried donuts, besides, these donuts are much smaller in size.

Aunque es una de mis combinaciones favoritas, hice estas donas para mi esposo. Es fanático de las donas, siempre que vamos al super, o algún lugar que tenga panadería, va por una dona glaseada. Y si pasamos por un Krispy Kreme, no se puede resistir. Sé que está bien darse un antojito de vez en cuando, pero creo que cuando se trata de donas, él exagera. Aunque está receta no es muy saludable que digamos, pienso que es mejor que las donas fritas, además estás donas son mucho más chicas en tamaño. Peanut Butter & Jelly Doughnuts – Donas de Crema de Cacahuate y Mermelada It is the second time I make donuts, so I don’t consider myself an expert in the subject. I confess that the first time I made this recipe, the result was a total fiasco (you can see a photo after the recipes). I filled the pan to the top, as the original recipe says, but they raised way too much, they looked more like muffins than donuts. It was impossible to remove them from the pan, tried to cut them in half, but as they were supposed to be filled, I knew it wasn’t going to work. So I prepared the recipe again, now filling the mold halfway to the top, and they turned out perfect.

Es la segunda vez que hago donas, así que no me considero una experta.  Les confieso que la primera vez que hice está receta me salieron fatal (pueden ver una foto después de las recetas). Llene el molde hasta el tope como dice la receta original, y resulta que subieron demasiado, parecían más muffins que donas. Fue imposible sacarlas del molde intactas, las trate de cortar a la mitad, pero como van rellenas, sabía que no iban a funcionar. The marmalade I usually use, has big chunks of fruit, and I knew it would be impossible to pass smoothly through the piping tip. So I measured half a cup of jam, and then pulse it a few seconds in the NutriBullet, in order to be smoother. I think this step worked quite well. If you use jelly, instead of marmalade, you can skip this step.

También es la primera vez que relleno unas donas. La mermelada que utilizo tiene trozos un poco grandes de frutas, sabía que ni de chiste iban a pasar por la punta de una duya. Así que medí la media taza de mermelada y después la pase unos segundos por el NutriBullet para que me quedara más tersa. Creo que mi invento funciono bastante bien. They are amazing! They have a spongy texture, and because the batter for the donuts is not that sweet, they don’t feel cloying to me. I think these donuts will become one of my favorite decadent snacks.

For the doughnuts
  1. 190 grams (6.70 oz) all-purpose flour
  2. 55 grams (1.94 oz) muscovado sugar
  3. ½ teaspoon baking soda
  4. ¼ teaspoon baking powder
  5. ¾ teaspoon salt
  6. 1 egg
  7. ½ cup buttermilk (I used ½ milk + 1½ teaspoon lime juice)
  8. ¼ cup canola oil
  9. 1 teaspoon pure vanilla extract
For the filling
  1. ½ cup jam or marmalade.
For the frosting
  1. 2 Tablespoons smooth peanut butter
  2. Pinch of salt
  3. 2 Tablespoons heavy cream
  4. 2 Tablespoons milk
  5. 1 teaspoon pure vanilla extract
  6. ¾ cup powdered sugar
For the doughnuts
  1. Preheat oven to 200°C (400°F). Grease and flour a standard sized donut pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder and salt.
  3. In a small bowl whisk the egg, buttermilk, canola oil and vanilla extract. Add the wet ingredients to the dry ingredients, mix until incorporated.
  4. Spoon batter into the donut molds, filling halfway to the top. Bake for 12 minutes, or until a toothpick inserted in the middle of the donut comes out clean. Allow to cool for 10 minutes.
For the filling
  1. If using marmalade, while the doughnuts are cooling, process the marmalade in a food processor until smooth. Spoon the jam, or marmalade, into a piping bag fitted with a 0.5 cm diameter tip (0.20 inches).
  2. Stick the tip into one of the sides of the donut. Move it to the right and squeeze the jam slowly and stop when the donut begins to expand. Carefully move the tip to the left and squeeze more jam to the other side. Turn the donut, and repeat on the opposite side of the doughnut.
For the frosting
  1. Mix the peanut butter, salt, heavy cream, milk and vanilla extract until smooth. Whisk the powdered sugar until smooth. Dip doughnuts into glaze, allow glaze to drip back, transfer to the wire rack to set.
  2. Enjoy!

Para las donas
  1. 190 gramos (6.70 oz) harina para todo uso
  2. 55 gramos (1.94 oz) azúcar mascabado
  3. ½ cucharadita bicarbonato de sodio
  4. ¼ cucharadita polvo de hornear
  5. ¾ cucharadita sal
  6. 1 huevo
  7. ½ taza suero de leche (yo usé ½ taza de leche + 1½ cucharadita de jugo de limón)
  8. ¼ taza aceite de canola
  9. 1 cucharadita extracto de vainilla
Para el relleno
  1. ½ taza de mermelada o jalea
Para el glaseado
  1. 2 cucharadas de crema de cacahuate
  2. Pizca de sal
  3. 2 cucharadas de crema para batir
  4. 2 cucharadas leche
  5. 1 cucharadita extracto de vainilla
  6. ¾ daza azúcar glass
Para las donas
  1. Precalienta el horno a 200° C (400° F). Engrasa y enharina un molde de donas.
  2. En un tazón grande, mezcla la harina, el azúcar, el bicarbonato de sodio, polvo de hornear y la sal.
  3. En un tazón pequeño mezcla el huevo, mantequilla, aceite de canola y la vainilla. Añade los ingredientes húmedos a los ingredientes secos, mezcla hasta que se incorpore bien.
  4. Vierte la mezcla en el molde de donas, llenando hasta la mitad. Hornea durante 12 minutos, o hasta que al insertar un palillo en el centro de la dona, éste salga limpio. Deja enfriar durante 10 minutos.
Para el relleno
  1. Si utilizas mermelada, mientras los donas se enfrían, pulsa varias veces la mermelada en un procesador de alimentos hasta que quede lisa. Vierte la mermelada en una duya con una punta de 0.5 cm (0.20 pulgadas) de diámetro.
  2. Inserta la punta en uno de los lados de la dona. Mueve a la derecha, y exprime la mermelada lentamente, detente cuando la dona empiece a expandirse. Mueve cuidadosamente la punta hacia la izquierda y exprime más mermelada para el otro lado. Gira la dona, y repite en el lado opuesto-
Para el glaseado
  1. Mezcla la crema de cacahuate, sal, crema para batir, leche y el extracto de vainilla hasta que queden suave. Bate el azúcar glass hasta que quede suave. Remoja las donas en el glaseado, deja que escurran el exceso. Transfiere a una rejilla y deja enfriar.
