Tofu Popcorn – Palomitas de TofuWhen I was in elementary school, I remembered one friend that always had chicken popcorn for lunch. As much as I told my mom to bought some (they were sold in the frozen section), she never did. Although at the time I didn’t understood, and I’m sure I made many tantrums in the supermarket, now that I think about it, probably the frozen option was not the best choice.

Cuando iba en primaria, a una amiga siempre le mandaban palomitas de pollo de lunch. Por más que le decía a mi mamá que las comprara (las vendían como un producto congelado), nunca lo hizo. Aunque en ese momento nunca lo entendí, y seguro hice muchos berrinches en el super, ahora que lo pienso, seguramente la opción congelada no era la mejor opción. Tofu Popcorn – Palomitas de TofuPopcorn Chicken are small pieces of chicken breast, breaded and fried. I had a block of tofu that was about to expire, and decided to use it to make these popcorn tofu.

Obviamente las versiones caseras son mucho mejores que las opciones que puedes encontrar en los congeladores de un supermercado. I’m not a big fan of fried dishes, but it was a special occasion, so I decided to follow the traditional method. At first I was a little confused with the combination of ingredients for the breading. I thought it would be very sweet, but after testing them with ketchup and different hot sauces, I think the flavor is perfectly balanced.

De hecho las preparé como botana para el Super Bowl. No soy muy fan de los platillos fritos, pero como era una ocasión especial, decidí hacerlas siguiendo el método tradicional. También me llamo la atención la combinación de ingredientes para el empanizado. Al principio pensé que era un poco dulce, pero después de probarlas con salsa cátsup y con diferentes salsas picantes, creo que el sabor se equilibra perfectamente. Tofu Popcorn – Palomitas de TofuIt’s the second time I freeze the tofu before using it in a recipe, the last time I did it for the vegan chorizo. The trick is to squeeze as much water from the tofu and then freeze it for a more “meaty” texture. I think that you can actually achieve a better texture with this method. This time, I thaw the tofu and marinated it with the liquid from some pickles, and I think it was a key point.

Es la segunda vez que congelo el tofu antes de utilizarlo en una receta, la vez pasada lo hice para el chorizo vegano. El chiste es exprimir la mayor cantidad de agua del tofu y después congelarlo para obtener una textura más “carnosa”. Creo que efectivamente se logra una mejor textura. Also I noticed that it’s a dish that adults and children enjoy, it all depends on the type of seasoning you choose for each age group.

Tofu Popcorn – Palomitas de Tofu

Ingredients
  1. 390 grams (14 oz) extra firm tofu (preferably organic)
  2. ½ cup pickle juice
  3. ½ cup pancake mix (I used an oat pancake mix)
  4. 1 Tablespoons confectioner’s sugar
  5. ½ teaspoon paprika
  6. ¼ teaspoon ground black pepper
  7. ½ teaspoon salt
  8. ⅛ teaspoon garlic powder
  9. ½ teaspoon ground basil
Instructions
  1. Line a plate with paper towels. Place the tofu block on the paper towels and put another layer of paper on top of the tofu. Put another plate on top and then weigh it down with a heavy object. Every half-hour or so, drain the water that has been pressed out of the tofu, until there is no more liquid.
  2. Wrap the tofu in plastic wrap and freeze for a couple of hours. Remove from freezer and cut into small cubes. Combine the tofu with the pickle juice and let marinate for 2 hours in the fridge.
  3. In a medium bowl combine the pancake mix, confectioner’s sugar, paprika, pepper, salt, garlic powder and basil.
  4. In a medium skillet, heat canola oil over medium heat.
  5. Drain tofu and coat tofu pieces individually with the dry batter.
  6. Gently drop pieces in the hot oil, and fry until golden brown and cooked thoroughly.
  7. Drain on a paper towel to remove excess oil.
  8. Enjoy!

Ingredients
  1. 390 gramos (14 onzas) tofu extra firme (preferiblemente orgánico)
  2. ½ taza jugo de pepinillos
  3. ½ taza mezcla para phot cakes (yo utilicé una mezcla para hot cakes de avena)
  4. 1 cucharada azúcar glass
  5. ½ cucharadita pimentón
  6. ¼ cucharadita pimienta negra molida
  7. ½ cucharadita sal
  8. ⅛ cucharadita ajo en polvo
  9. ½ cucharadita albahaca molida
Instructions
  1. Cubre un plato con papel de cocina. Coloca el bloque de tofu sobre el papel y pon otra capa de papel encima del tofu. Coloca otro plato en la parte superior y encima coloca un objeto pesado. Cada media hora más o menos, drena el agua que sale del tofu, hasta que no haya más líquido.
  2. Envuelve el tofu en papel plástico y congela durante un par de horas. Retira del congelador y corta en cubos pequeños. En un tazón combina el tofu con el jugo de los pepinillos, y deja marinar durante 2 horas en el refrigerador.
  3. En un tazón mediano combina la mezcla para hot cakes, azúcar glasss, pimentón, pimienta, sal, ajo en polvo y albahaca.
  4. En una sartén mediana, calienta suficiente aceite de canola a fuego medio.
  5. Escurre los trozos de tofu y cubre cada tofu individualmente con la mezcla de ingredientes secos. Deja caer suavemente las piezas de tofu en el aceite caliente y fríe hasta que estén doradas y bien cocidas.
  6. Escurre sobre papel absorbente para eliminar el exceso de aceite.
  7. ¡A disfrutar!
