Even though I have not been out of my house a lot in the last two weeks, it seems that the weather is already changing. In the mornings and afternoons, it is getting colder, with the typical autumn air. At this time of the year, when it’s hard to leave behind a warm bed, there is nothing better than waking up to the smell of a delicious breakfast. So, for a cold morning, I suggest you make these yummy Belgian apple waffles.

Los waffles de manzana tienen el sabor típico del otoño: manzanas y especias. Son ideales para una mañana fría, acompañados con una buena miel Maple y una taza de café, té o chocolate.

Ingredients
  1. 1½ cup whole milk
  2. 30 grams (1.06 oz) unsalted butter
  3. 1 Tablespoon + ½ teaspoon sugar
  4. 1 Tablespoon Maple syrup
  5. 1 teaspoon ground cinnamon
  6. ½ teaspoon allspice
  7. ½ teaspoon ground cloves
  8. Skin of one Granny Smith
  9. 1¼ teaspoon active dry yeast
  10. 290 grams (10.23 oz) all purpose flour
  11. ¼ teaspoon baking powder
  12. 2 egg yolks
  13. ¾ cup + ⅛ cup applesauce (preferably homemade)
  14. 3 egg whites
  15. ¼ teaspoon salt
Instructions
  1. In a medium saucepan heat the, milk, butter, 1 Tablespoon sugar, maple syrup, cinnamon, allspice and clove, until the butter is melted. Remove from the fire and add the skin of the apple. Cover with plastic wrap and let it cool for 15 minutes. Remove the apple skin. Add the yeast and mix.
  2. In a large bowl whisk the flour and the baking powder until well combined. Add the milk mixture and the egg yolks, whisk until incorporated. Add the applesauce and mix until just combined.
  3. In a medium bowl, with the help of an electric mixer, beat the egg whites, salt and ½ teaspoon sugar to soft peaks. With a spatula, gently fold the egg whites into the batter until just incorporated. Cover with plastic wrap and refrigerate for at least 8 hours.
  4. Heat a waffle iron. Brush the waffle iron with a little vegetable oil. Working in batches, cook the batter in the waffle iron according to your waffle iron manufacturer’s instructions until crisp and golden.
  5. Serve the waffles with pure Maple syrup.
  6. Enjoy!

Ingredients
  1. 1½ taza leche entera
  2. 30 gramos (1.06 oz) mantequilla sin sal
  3. 1 cucharada + ½ cucharadita de azúcar
  4. 1 cucharada miel Maple pura
  5. 1 cucharadita canela molida
  6. ½ cucharadita allspice
  7. ½ cucharadita clavo molido
  8. Piel de una Granny Smith
  9. 1¼ cucharadita levadura seca activa
  10. 290 gramos (10.23 oz) harina para todo uso
  11. ¼ cucharadita polvo de hornear
  12. 2 yemas de huevo
  13. ¾ taza + ⅛ de taza de puré de manzana (preferiblemente casero)
  14. 3 claras de huevo
  15. ¼ cucharadita de sal
Instructions
  1. En una olla mediana calienta la leche, la mantequilla, 1 cucharada de azúcar, la miel Maple, la canela, allspice y el clavo, hasta que la mantequilla se derrita. Retira del fuego y agrega la piel de la manzana. Cubre con envoltura de plástico y deja que se enfríe durante 15 minutos. Retira la piel de la manzana. Agregua la levadura y mezcle.
  2. En un tazón grande mezcla la harina y el polvo de hornear hasta que estén bien combinados. Agrega la mezcla de leche y las yemas de huevo, bate hasta incorporar. Agrega el puré de manzana y mezcla hasta que esté bien mezclado.
  3. En un tazón mediano, con la ayuda de una batidora eléctrica, bate las claras de huevo, la sal y ½ cucharadita de azúcar hasta obtener picos suaves. Con una espátula, dobla suavemente las claras de huevo en la mezcla hasta incorporar. Cubre con una envoltura de plástico y refrigera durante al menos 8 horas.
  4. Calienta una plancha de waffles. Cepilla la plancha con un poco de aceite vegetal. Trabajando en lotes, cocina la mezcla en la waflera de acuerdo con las instrucciones del fabricante, hasta que estén crujientes y dorados.
  5. Sirve los waffles con miel Maple pura.
  6. ¡A disfrutar!
