Lately, with my busy days, bars have become my best allies. For practicality I had been buying them, until recently that I had time to prepare a homemade version. Unlike when I make cakes or muffins, I almost never share bars whit other people. I prefer to keep them and have a healthy snack on hand.

Últimamente con las prisas, las barritas se han vuelto mis mejores aliadas. Por practicidad las había estado comprando, hasta que por fin tuve tiempo de preparar una versión casera. A diferencia de cuando preparo pasteles o muffins, casi nunca comparto barritas. Prefiero guardarlas y tener un snack saludable a la mano. I decided to make these coconut bars, although I admit that I have a love-hate relationship with this ingredient. I really hate the artificial taste and smell of coconut, so I never order desserts or ice creams with a coconut flavor. The lotions and sunscreens with coconut scent are my nightmare. But a couple of years ago I discovered that, if I use natural coconut in baked goods, a very interesting flavor is achieved, apparently the goal is not to use artificial flavor.

Decidí hacer estas barritas de coco, aunque admito que tengo una relación de amor-odio con este ingrediente. Me choca el sabor y el olor artificial a coco, así que nunca pido postres o helados sabor coco. Las lociones y los protectores solares con aroma a coco son mi pesadilla. Pero hace un par de años descubrí que, si utilizo coco natural en los productos horneados, se logra un sabor bastante interesante, al parecer el chiste es no utilizar el sabor artificial. I’m super happy that I decided to make these bars because they’re delicious! The lower part is a layer of bitter chocolate, and in addition to coconut they have small pieces of almonds, pistachios and cranberries. Unfortunately, this time I couldn’t find shredded coconut without sugar, so I used the one with sugar, and I decreased the amount of sugar in the recipe considerably.

Estoy super feliz de que me anime a hacer estas barritas porque están ¡deliciosas! La parte de abajo es una capa de chocolate amargo, y además de coco llevan trocitos de almendra, pistaches y arándanos. Desafortunadamente no encontré coco sin azúcar, así que utilicé el que tiene azúcar, y disminuí considerablemente la cantidad de azúcar en la receta. In Mexico there is a traditional sweet made from coconut, known as “cocada”. I’ve never liked it, even though I’ve tried homemade and commercial versions. I think the reason is that the coconut is not golden / toasted, believe it or not, that simple step changes its flavor considerably.

En México existe un dulce tradicional hecho a base de coco, conocido como cocada. Nunca me ha gustado, a pesar de que he probado versiones caseras y comerciales. Creo que la razón es que el coco no está dorado/tostado, aunque no lo crean, ese simple paso cambia considerablemente su sabor. I’m sure that you will love these coconut, cranberry, pistachio and almond bars. Plus, they don’t contain gluten. It is a perfect snack for adults and children alike. I prefer small portions, so I cut them into 16 squares, but if you prefer bars a little larger, you can cut them into 8 rectangles.

Estoy segura que estas barritas de coco, arándano, pistache y almendra les van a encantar. Además, no contienen gluten. Es un snack perfecto para grandes y chicos. Yo prefiero porciones pequeñas, por eso las corte en 16 cuadritos, pero si prefieres barras un poquito más grandes, las puedes cortar en 8 rectángulos. 

Coconut, Cranberry, Pistachio & Almond Bars

Ingredients
  1. 100 grams (3.53 oz) semi-sweet chocolate (at least 70% cacao)
  2. 150 grams (5.29 oz) sugar
  3. 200 grams (7.04 oz) unsweetened shredded coconut
  4. 50 grams (1.76 oz) dried cranberries
  5. 50 grams (1.76 oz) unsalted pistachios, roughly chopped
  6. 50 grams (1.76 oz) whole almonds, roughly chopped
  7. ½ teaspoon salt
  8. 100 grams (3.53 oz) unsalted butter, melted
  9. 2 eggs
  10. 1 teaspoon vanilla extract
Instructions
  1. Line the bottom and sides of a 20 cm (8 inches) square baking dish with parchment paper. It’s better is there is some overhanging paper.
  2. Melt the chocolate slowly in a double boiler or in the microwave in 30 second intervals. Pour into the prepared baking dish, covering completely the entire bottom, use an offset spatula to smooth the surface. Freeze for 15 minutes or until set.
  3. Preheat oven to 180°C (350°F).
  4. In a large bowl mix the sugar with the coconut, cranberries, pistachios, almonds and salt. Pour the melted butter and mix until completely incorporated. Add the eggs and the vanilla, mix very well. Pour into the baking dish, on top of the chocolate. Press slightly to achieve a smooth surface.
  5. Bake for 10 minutes. Turn around and bake for 10 more minutes or until the coconut is golden browned. Remove from the oven and let cool completely, approximately one hour. Refrigerate for at least 2 hours. Cut into 16 squares.
  6. Enjoy!
Notes
  1. If you can’t find unsweetened shredded coconut, use sweetened shredded coconut and reduce the sugar to 80 grams (2.82 oz)

Ingredients
  1. 100 gramos (3.53 oz) chocolate semi-amargo (al menos 70% de cacao)

  3. 200 gramos (7.04 oz) coco rallado sin azúcar
  4. 50 gramos (1.76 oz) arándanos deshidratados
  5. 50 gramos (1.76 oz) pistachos sin sal, toscamente picados
  6. 50 gramos (1,76 oz) almendras enteras, toscamente picadas
  7. ½ cucharadita sal
  8. 100 gramos (3.53 oz) mantequilla sin sal, derretida
  9. 2 huevos
  10. 1 cucharadita de extracto de vainilla
Instructions
  1. Forra la parte inferior y los lados de un molde cuadrado para hornear de 20 cm (8 pulgadas) con papel para hornear. Es mejor si el papel sobresale por los lados.
  2. Derrite el chocolate lentamente a Baño María o en el microondas en intervalos de 30 segundos. Vacía en el molde para hornear preparado, cubriendo por completo todo el fondo, usa una espátula para alisar la superficie. Congela por 15 minutos o hasta que esté duro.
  3. Precalienta el horno a 180°C (350 ° F).
  4. En un tazón grande, mezcla el azúcar con el coco, los arándanos, los pistachos, las almendras y la sal. Vacía la mantequilla derretida y mezcla hasta que esté completamente incorporado. Agrega los huevos y la vainilla, mezcla muy bien. Vierte en el molde para hornear, encima del chocolate. Presiona ligeramente para lograr una superficie lisa.
  5. Hornea por 10 minutos. Da la vuelta y hornear por 10 minutos más o hasta que el coco esté dorado. Retira del horno y deja enfriar por completo, aproximadamente una hora. Refrigera al menos 2 horas. Corta en 16 cuadrados.
  6. ¡A disfrutar!

  1. Si no puedes encontrar coco rallado sin azúcar, usa el coco rallado con azúcar y reduce el azúcar a 80 gramos (2.82 oz)
