Chai Baked Doughnuts – Donas Chai Horneadas It really amazes me that every time we have a cold and cloudy day in Mexico City, it seems like no one leaves their houses, or they get out for the minimum time possible. It is true that many of our buildings are not made for the cold weather, but I think we exaggerate a little bit, it seems that we literally freeze and leave aside the daily routine. I prefer the cold weather, so I’m not complaining these days. It is also when I prefer to bake.

Me impacta que cuando en la Ciudad de Mexico hace frío y esta nublado, la gente no sale de sus casas, o sale lo mínimo. Es cierto que muchas de nuestras construcciones no están hechas para el frío, pero creo que exageramos un poco, literal parece que nos congelamos y dejamos la rutina a un lado. A mí la verdad me gusta más el frío que el calor, así que no me quejo con estos días. Además es cuando más se me antoja hornear. Chai Baked Doughnuts – Donas Chai Horneadas One of my favorite mixtures is the one for chai tea. I love to use the same spices in muffins, cookies and breads, so while I was looking for a new recipe, I found these Chai doughnuts. They are de-li-cious! They are super spongy and porous, which in my case, enabled the sugar coating to be absorbed.

Una de mis mezclas favoritas es la del té chai.  Me encanta utilizarla en panques, galletas y muffins, así que buscando una nueva receta, me encontré con estas donas Chai. Quedaron ¡de-li-cio-sas! Lately, the typical commercial donuts, which are fried, wreck my stomach in a very bad way, I don’t know why but nowadays I prefer baked donuts. Besides they are smaller, so I don’t feel so bad having these doughnuts for breakfast with my morning coffee.

Últimamente me han caído muy mal las típicas donas comerciales, las que son fritas, así que me quedo con las donas horneadas. For the donuts
  1. 1 cup almond milk
  2. 2 black tea bags
  3. 2 cups all-purpose flour
  4. ⅔ cup sugar
  5. ½ teaspoon baking powder
  6. 1 teaspoon baking soda
  7. 2 teaspoons ground cinnamon
  8. 1 teaspoon ground cardamom
  9. ½ teaspoon ground ginger
  10. ¼ teaspoon ground clove
  11. ¼ teaspoon ground nutmeg
  12. ¼ teaspoon salt
  13. ¼ cup canola oil
  14. 1 Tablespoon apple cider vinegar
  15. 2 teaspoons pure vanilla extract
For the glaze
  1. 30 grams (2 Tablespoons) unsalted butter, melted (you can use vegan butter)
  2. 1 teaspoon pure vanilla extract
  3. ¾ teaspoon ground cinnamon
  4. 1¼ cup confectioners’ sugar
  5. ¼ cup almond milk
For the donuts
  1. Preheat the oven to 180°C (350°F). Grease and flour a standard sized donut pan.
  2. Heat almond milk in a small saucepan until almost boiling. Remove from heat and add the tea bags. Allow to steep for 10 minutes, then remove tea bags, squeezing out as much almond milk as possible. Re-measure, and add more almond milk to have exactly 1 cup.
  3. In a large bowl, mix together the flour, sugar, baking soda, baking powder, cinnamon, cardamom, ginger, nutmeg, cloves and salt.
  4. In a small bowl whisk the canola oil, apple cider vinegar and vanilla extract. Pour in the almond milk mixture, and stir until combined.
  5. Add the wet ingredients to the dry ingredients, mix until incorporated.
  6. Spoon batter into the donut molds, filling halfway to the top. Bake for 12 minutes, or until puffed and a toothpick inserted in the middle of the donut comes out clean. Allow to cool for 20 minutes before putting the glaze.
For the glaze
  1. In a small bowl mix the melted butter, vanilla and cinnamon. Whisk in the confectioners’ sugar. Pour the almond milk and keep whisking until smooth. (If the mixture is to watery, you can add more powdered sugar, and if it’s too thick, add more almondmilk)
  2. Dip doughnuts into glaze, allow glaze to drip back, transfer to the wire rack to set.
  3. Enjoy!

Para las donas
  1. 1 taza leche de almendras
  2. 2 bolsas de té negro
  3. 2 tazas de harina
  4. ⅔ taza de azúcar
  5. ½ cucharadita polvo de hornear
  6. 1 cucharadita bicarbonato de sodio
  7. 2 cucharaditas canela molida
  8. 1 cucharadita cardamomo molido
  9. ½ cucharadita jengibre molido
  10. ¼ cucharadita clavo molido
  11. ¼ cucharadita nuez moscada molida
  12. ¼ cucharadita sal
  13. ¼ taza aceite de canola
  14. 1 cucharada vinagre de manzana
  15. 2 cucharaditas extracto de vainilla
Para el glaseado
  1. 30 gramos (2 cucharadas) mantequilla sin sal, derretida (puedes usar mantequilla vegana)
  2. 1 cucharadita extracto de vainilla
  3. ¾ cucharadita canela molida
  4. 1¼ taza azúcar glass
  5. ¼ taza leche de almendras
Para las donas
  1. Precalienta el horno a 180° C (350° F). Engrasa y enharinarun molde para donas de tamaño estándar.
  2. Calienta la leche de almendras en una oll pequeña hasta que esté casi hirviendo. Retira del fuego y añade las bolsas de té. Deja reposar durante 10 minutos, luego retira las bolsas de té, exprime la mayor cantidad de leche de almendra. Vuelve a medir, y añade más leche de almendras para tener exactamente 1 taza.
  3. En un tazón grande, mezcla la harina, el azúcar, el bicarbonato de sodio, polvo de hornear, la canela, el cardamomo, jengibre, nuez moscada, clavo de olor y sal.
  4. En un tazón pequeño mezcla el aceite de canola, el vinagre de sidra de manzana y la vainilla. Vierte la mezcla de leche de almendras, y revuelve hasta que se mezclen.
  5. Añade los ingredientes húmedos a los ingredientes secos, mezcla hasta que se incorporen.
  6. Vierte la mezcla en el molde de donas, llenando hasta la mitad. Hornea durante 12 minutos, o hasta que se inflen y al insertar un palillo en el centro de una dona, éste salga limpio. Deja enfriar durante 20 minutos antes de poner el glaseado.
Para el glaseado
  1. En un tazón pequeño mezcla la mantequilla derretida, la vainilla y la canela. Integra el azúcar glass. Vierte la leche de almendras y sigue batiendo hasta que quede suave. (Si la mezcla está muy acuosa, agrega un poco más de azúcar glass, y si es demasiado espesa, agrega más leche de almendra)
  2. Baña cada dona con el glaseado, deja que gotee el exceso. Traslada a una rejilla.
  3. ¡A disfrutar!
