Greek Yogurt Tart with Thyme Marinated Peaches – Tarta de Yogur Griego con Duraznos Marinados en Tomillo After a very complicated week, today I share a recipe that has left me shocked. It is a Greek Yogurt Tart with Thyme Marinated Peaches. The combination of ingredients may initially sound a little weird, but after testing the final product, I assure you it tastes delicious.

Después de una semana bastante complicadita, hoy sábado les comparto una receta que me ha dejado impactada. Es una tarta de yogurt griego con duraznos marinados con tomillo. La combinación de ingredientes al principio puede sonar un poco rara, pero después de probarla les aseguro que sabe muy muy rica. Greek Yogurt Tart with Thyme Marinated Peaches – Tarta de Yogur Griego con Duraznos Marinados en Tomillo Besides, when I saw the recipe, I really liked the idea that it uses very little sugar. And although the crust from the recipe in the magazine, looks very good, I decided to use my preferred crust for tarts, made with grahams crackers and no butter. As the tart is divided into three parts: crust, filling and topping, I prepared each one on a different day. I really didn’t have much time this week. The good thing is that it’s a dessert that lends itself to this type of partition.

Además, cuando vi esta receta, me gustó la idea de que lleva muy poca azúcar. Y aunque la base que preparan en la revista se ve muy rica, decidí utilizar mi base preferida para tartas hecha con galletas. Como la tarta se divide en tres partes: base, relleno y topping, hice cada uno en tres días diferentes. De verdad no tuve mucho tiempo esta semana. After the strawberry and basil loaf, which everyone liked it a lot, I decided to experiment more with this type of flavors, that at first glance don’t seem like a good combination, but after testing them,  it totally changes our ideas. Actually the combination of peach + thyme + vinegar, would have never crossed my mind for a dessert.

¿Por qué me decidí con una combinación de sabores tan rara? Después del panqué de fresas con albahaca, que a todo el mundo le gustó mucho, he decidido experimentar más con este tipo de sabores que a primera vista no parecen una buena combinación, pero después de probarlos cambia totalmente nuestra idea. The lemon zest used in the crust, gives it a very different flavor. And the texture of the Greek yogurt mousse is very good. It is a very refreshing dessert, ideal for summer. I’m sure I will repeat this recipe for a special gathering or party.

La combinación final de sabores es impresionante, sobre todo para los que sabemos todos los ingredientes que lleva. La ralladura de limón en la base le da un sabor muy diferente, y la textura del mousse de yogurt griego es buenísima. Es una tarta muy fresca, ideal para el verano. Greek Yogurt Tart with Thyme Marinated Peaches

For the crust
  1. 190 grams (6.7 oz) graham crackers crumbs (I used Maria cookies)
  2. 1 Tablespoon sugar
  3. Zest from one lemon
  4. 2½ Tablespoon almond milk
For the Greek Yogurt Mousse
  1. 1 teaspoon unflavored powdered gelatin
  2. ¾ cup plus 1 Tablespoon heavy cream
  3. 3 Tablespoons raw honey
  4. 1½ cups unsweetened plain Greek yogurt
  5. Pinch salt
For the Thyme Marinates Peaches
  1. 3 medium ripe peaches, pitted and cut into wedges (I used 7 small peaches)
  2. ⅓ cup light brown sugar
  3. ⅓ cup sweet white wine
  4. 1½ Tablespoons rice vinegar
  5. Pinch salt
  6. 1½ teaspoons fresh thyme leaves
For the crust
  1. Preheat oven to 180°C (350°F). Lightly grease a 23 cm (9 in) pie pan or dish.
  2. In a medium sized bowl, combine the cookie crumbs, sugar and lemon zest. Add the almond milk and mix until it has a grainy texture, like wet sand. Press the crust firmly and evenly into the bottom and all the way up the sides of the pie pan. Bake for 10-12 minutes, or until firm and golden brown. Allow crust to cool.
For the Greek Yogurt Mousse
  1. In a small bowl, sprinkle the gelatin over 1 Tablespoon cold water. Let stand until the gelatin blooms, about 5 minutes.
  2. Meanwhile, in a small saucepan, stir 1 Tablespoon of heavy cream with the honey, over medium heat until the honey melts.
  3. When the gelatin has bloom, heat in the microwave for 30 seconds. The gelatin should be completely dissolved and all the granules should be melted. Stir in the gelatin mixture into the honey-cream mixture, mix until incorporated. Remove from the heat. Add the yogurt and salt, and whisk until smooth.
  4. In a large bowl, whisk the remaining ¾ cup cream until soft peaks form. Gently fold the yogurt mixture into the cream.
  5. Pour the mousse into the cooled crust and smooth to the edges with an offset spatula. Cover and refrigerate until firm, at least 4 hours.
For the Thyme Marinates Peaches
  1. Combine all the ingredients in a medium bowl and let marinate at room temperature for at least 40 minutes.
For the assembly
  1. Drain the peaches. Simmer the marinade in a small pot, over medium heat, until syrupy. Refrigerate until cold, approximately 30 minutes.
  2. Transfer the tart to a serving plate. Spoon the peaches and a little of the syrup over the mousse.
  3. Enjoy!

Para la corteza
  1. 190 gramos (6.7 onzas) migajas galletas graham (yo utilicé galletas María)
  2. 1 cucharada azúcar
  3. Ralladura de un limón
  4. 2½ cucharadas leche de almendras
Para el mousse de yogur griego
  1. 1 cucharadita gelatina en polvo sin sabor
  2. ¾ taza + 1 cucharada crema para batir
  3. 3 cucharadas miel
  4. 1½ tazas yogur griego natural sin azúcar
  5. Pizca de sal
Para los duraznos marinados en tomillo
  1. 3 duraznos medianos maduros, sin hueso y cortados en gajos (yo usé 7 duraznos pequeños)
  2. ⅓ taza azúcar mascabado claro
  3. ⅓ taza vino blanco dulce
  4. 1½ cucharadas vinagre de arroz
  5. Pizca de sal
  6. 1½ cucharaditas hojas de tomillo fresco
Para la corteza
  1. Precalienta el horno a 180° C (350° F). Engrasa ligeramente un molde o platón para pay de 23 cm (9 pulgadas).
  2. En un tazón mediano, combina la migajas de galletas, el azúcar y la ralladura de limón. Añade la leche de almendras y mezcla hasta que tenga una textura granulada, como arena mojada. Presiona la corteza, firme y uniformemente, en el fondo y en los lados del molde para pay.
  3. Hornea durante 10-12 minutos, o hasta que esté firme y dorada. Deje que se enfríe.
Para el mousse de yogur griego
  1. En un tazón pequeño, espolvorear la grenetina sobre 1 cucharada de agua fría. Deja reposar hasta que la grenetina se esponje, aproximadamente 5 minutos.
  2. Mientras tanto, en una olla pequeña, mezcla 1 cucharada de crema para batir con la miel, a fuego medio, hasta que la miel se derrita.
  3. Cuando la grenetina haya esponjado, calienta en el microondas durante 30 segundos. La grenetina debe de estar completamente disuelta y todos los gránulos deben de estar derretidos. Agrega la grenetina a la mezcla de miel y crema, mezcla hasta que se incorpore. Retira del fuego. Añade el yogur y la sal, y mezcla a incorporar.
  4. En un tazón grande, bate la crema restante hasta que se formen picos suaves. Integra suavemente la mezcla de yogur en la crema.
  5. Vierte la mousse sobre la corteza fría y suaviza la superficie con una espátula. Cubre y refrigera hasta que esté firme, por lo menos 4 horas.
Para los duraznos marinados en tomillo
  1. Combina todos los ingredientes en un tazón mediano y deja marinar a temperatura ambiente durante al menos 40 minutos.
Para el montaje
  1. Escurre los melocotones. Cocina a fuego lento la marinada en una olla pequeña, hasta que tenga la consistencia de un almíbar. Refrigera hasta que esté fría, aproximadamente 30 minutos.
  2. Transfiere la tarta a un plato de servir. Coloca encima los duraznos y un poco del almíbar sobre la mousse.
  3. ¡ A disfrutar!
