On Sunday I made flour tortillas with black beans, I thought they would be very healthy and nutritious. I tried them and they actually tasted good, but after a few hours they turned into a nightmare for my stomach. I’m not sure what went wrong, but I decided not to share the recipe.

Tenía otra idea de receta para compartirles el día de hoy, pero creo que en mis experimentos algo salió muy mal. El domingo hice unas tortillas con harina de frijol negro, según yo iban a ser muy saludables y nutritivas. Las probé y no sabían nada mal, pero después de unas horas se convirtieron en una pesadilla para mi estómago. I chose the lemon and thyme bundt cake from Nigella Lawson, because I think most of her recipes are guaranteed, at least the few that I have prepared. And that is always a good sign.

Apenas me estoy recuperando, por eso decidí preparar una receta sencilla, sin muchas complicaciones, pero que tuviera un toque diferente.  Escogí el bundt de limón y tomillo de Nigella Lawson, porque creo que la mayoría de sus recetas están aseguradas, al menos las pocas que he preparado. In Mexico we only have one size eggs, it is true that sometimes some are smaller than others, but I’ve never seen eggs advertised as jumbo, extra-large, large, medium, small and super small. The original recipe calls for 3 eggs extra-large, I use three normal organic eggs, and the result was excellent.

 Algo que siempre me saca de onda en recetas extranjeras, es que especifiquen el tamaño de los huevos. En México solamente tenemos un tamaño de huevos, es cierto que algunas veces algunos son más pequeños que otros, pero nunca he visto huevos anunciados como jumbo, extra grandes, grandes, medianos, pequeños y súper pequeños. La receta original pide 3 huevos extra grandes, yo utilice tres huevos orgánicos normales, y el resultado estuvo excelente. The lemon flavor is the one that predominates, although many people can’t distinguish the taste of thyme, you know that there is something different in the batter. I think this cake has the perfect balance between citric and the mintiness of the thyme.

Se trata de un pastel esponjoso y húmedo por dentro, con una corteza crujiente por fuera. Predomina el sabor a limón, y aunque muchas personas no distinguen el sabor de tomillo, saben que tiene algo diferente. For the bundt cake
  1. 220 grams (7.76 oz) turbinado sugar
  2. Zest and juice of 2 lemons
  3. ¼ cup fresh thyme leaves
  4. 378 grams (13.33 oz) all-purpose flour
  5. ¼ teaspoon baking powder
  6. ¾ teaspoon baking soda
  7. 195 grams (6.88 oz) unsalted butter, at room temperature
  8. 3 eggs
  9. 1 cup buttermilk (or 1 cup milk mixed with 1 Tablespoon apple cider vinegar)
For the glaze
  1. 1 cup confectioner’s sugar
Instructions
  1. Preheat oven to 180°C (350°F). Grease a 10 cup bundt mold.
  2. In a medium bowl, mix the sugar with the zest of 2 lemons and the thyme leaves.
  3. In another medium bowl, mix together the flour, baking powder and baking soda.
  4. In a stand mixer, fitted with the paddle attachment, cream the butter and sugar, until light and fluffy. Add the eggs, one by one. Stop to scrape the bowl as needed. On low speed, add one-third of the dry ingredients at a time, alternating with 1/2 cup of the buttermilk at a time, beginning and ending with the flour. Add the juice of one lemon. After the last addition, scrape the bowl and mix for about 30 seconds to mix the batter fully.
  5. Pour into the prepared bundt pan. Bake for 60 -70 minutes, or until a toothpick inserted in the middle comes out clean.
  6. Cool on wire rack 15 minutes. Unmold onto a serving plate. When the cake is cold, add the glaze.
For the glaze
  1. In a small bowl mix the confectioners’ sugar with the juice of the second lemon. Whisk until smooth. (If the mixture is too watery, you can add more powdered sugar, and if it’s too thick, add more lemon juice).
  2. Spread over the top of the cake.
  3. Enjoy!

Para el pastel bundt
  1. 220 gramos (7.76 onzas) azúcar turbinado
  2. La ralladura y el jugo de 2 limones amarillos
  3. ¼ taza hojas frescas de tomillo
  4. 378 gramos (13.33 oz) harina
  5. ¼ cucharadita polvos de hornear
  6. ¾ cucharadita bicarbonato de sodio
  7. 195 gramos (6.88 onzas) mantequilla sin sal, a temperatura ambiente
  8. 3 huevos
  9. 1 taza de suero de leche (o 1 taza de leche mezclada con 1 cucharada de vinagre de manzana)
Para el glaseado
  1. 1 taza de azúcar glass
Instructions
  1. Precalentar el horno a 180° C (350° F). Engrasar un molde bundt de 10 taza.
  2. En un recipiente mediano, mezclar el azúcar con la ralladura de 2 limones y las hojas de tomillo.
  3. En otro tazón mediano, mezcla la harina, los polvo de hornear y bicarbonato de sodio.
  4. En una batidora de pie, con el aditamento de pala, bate la mantequilla y el azúcar hasta que esté suave y esponjosa. Añade los huevos, uno a uno. Para para raspar los lados del recipiente según sea necesario. En velocidad baja, añade un tercio de los ingredientes secos, alternando con media taza de el suero de leche, continua este proceso, comenzando y terminando con la harina. Añade el jugo de un limón. Después de la última adición, raspa el tazón y mezcla durante unos 30 segundos para mezclar la masa completamente.
  5. Verter en el molde Bundt previamente preparado. Hornear durante 60 -70 minutos, o hasta que un palillo insertado en el centro salga limpio.
  6. Enfriar sobre una rejilla durante 15 minutos. Desmoldar sobre un plato para servir. Cuando el pastel esté frío, añadir el glaseado.
Para el glaseado
  1. En un tazón pequeño mezcla el azúcar glass con el jugo del segundo limón. Bate hasta que quede suave. (Si la mezcla es demasiado acuosa, puedes agregar más azúcar glass, y si es demasiado espesa, agrega más jugo de limón).
  2. Esparce en la parte superior del pastel.
  3. ¡A disfrutar!
