Sea Salt Caramel Cashew Ice Cream – Helado de Nuez de la India con Caramelo SaladoThis past weekend, spring finally arrived; and although it was raining almost every day, I decided to prepare a dessert to celebrate the supposed arrival of the heat. A few months ago I tried a Häagen Dazs ice cream with swirls of salted caramel, it was great! Although I had seen many recipes online for this caramel, I had never tasted it before.

El fin de semana empezó oficialmente la primavera, y aunque aquí estuvo lloviendo casi todos los días, decidí preparar un postre para celebrar la supuesta llegada del calor. Hace unos meses probé un helado de Häagen Dazs con caramelo salado y estaba ¡buenísimo! Maybe it was because I did not allow the nuts to soak for the recommended time, or I didn’t grind them to a super fine texture. But after trying this ice cream, I think my faith in vegan ice cream made from cashews, has been restored.

Hace algún tiempo había preparado un helado con nueces de la India y la verdad no quede muy contenta con el resultado. No sé si fue porque no deje remojando las nueces el tiempo necesario o si me falto molerlas un poco más. Pero después de probar este helado, creo que mi fe en los helados veganos hechos a base de nueces de la India, ha quedado restaurada. Sea Salt Caramel Cashew Ice Cream – Helado de Nuez de la India con Caramelo SaladoI don’t consider myself a vegetarian, let alone a vegan, but I love to try desserts with the characteristics of these diets because I consider them quite healthy. For example, in this type of ice creams, you substitute the milk and the eggs, with heart healthy nuts. In addition, the purpose is to avoid the use of processed sweeteners, so you use dates and maple syrup. Not bad at all…

No me considero vegetariana ni mucho menos vegana, pero me encanta probar postres con las características de estas dietas porque las considero bastante saludables. Por ejemplo, en este tipo de helados cremosos, sustituyen los lácteos y los huevos, por las nueces. Además se trata de evitar los endulzantes súper procesados, entonces utilice dátiles y miel de maple. Sea Salt Caramel Cashew Ice Cream – Helado de Nuez de la India con Caramelo SaladoThe original recipe used bourbon for the caramel, but I used the liquor I had on hand, that is Sheridan’s. A touch of coffee goes well with everything right? I’ve been introducing, gradually, coconut in my meals, but I don’t really like the taste. If I know the coconut flavor won’t stand out, it’s ok for me to use it, but otherwise I change it for another ingredient. In this case, I preferred to use almond milk instead of coconut milk. I thought that this substitution would watered down the final consistency of the ice cream, but the truth is that it has a pretty firm and creamy texture.

La receta original utilizaba bourbon en el caramelo, pero yo no tengo, así que utilice el licor que tenía a la mano: Sheridan’s. Un toque de café va bien con todo ¿cierto? Poco a poco he ido introduciendo el coco en mis comidas, pero no me gusta mucho su sabor. Si sé que no va a sobresaltar está bien, pero en este caso preferí utilizar leche de almendra en lugar de leche de coco. Pensé que por esa sustitución iba a quedar aguado,  pero la verdad tiene una consistencia bastante firme y cremosa. Sea Salt Caramel Cashew Ice Cream – Helado de Nuez de la India con Caramelo SaladoI had some problems when mixing the caramel, I didn’t obtain a swirl pattern, instead it mix all together.  In taste it doesn’t matter, but its appearance is not as elegant as I wanted. It is definitely an ice cream recipe I will repeat, and probably make some other variations, now that I realized that cashew ice cream with is scrumptious.

Tuve algunos problemas con la mezcla del caramelo, no me quedaron las rayitas muy definidas, se mezcló todo. En sabor no importa, pero en apariencia no quedo tan elegante como quería. Definitivamente es un helado que repetiré, y probablemente haga alguna que otra variación ahora que comprobé que el helado con nuez de la India es riquísimo.

Sea Salt Caramel Cashew Ice Cream

For the sea salt caramel
  1. 14 Medjool dates, pitted
  2. 3-4 Tablespoons warm water
  3. ½ teaspoon se salt
  4. 1 Tablespoon Sheridan’s (coffee and cream liquor)
For the ice cream
  1. 1½ cup raw cashews (soaked in cold water for 4-6 hours)
  2. 450 ml vanilla almond milk
  3. 3 Tablespoons coconut oil, melted
  4. ½ cup maple syrup
  5. 2 teaspoons pure vanilla extract
  6. Pinch of salt
For the sea salt caramel
  1. Add the dates to a food processor, pulse until creamy and smooth. Add water until it has a thick caramel consistency. Add the salt and Sheridan’s, and mix to combine. Set aside.
For the ice cream
  1. Drain the cashews. In a high speed blender, add the cashews, almond milk, coconut oil, maple syrup, vanilla and salt, blend until creamy and smooth. Transfer to an air-tight container and chill for at least 6 hours or overnight.
  2. Pour into the ice cream maker and churn according to the manufacturer’s instructions.
  3. Once churned, scoop 1/4 of the cashew ice cream in the bottom of an air-tight container, then scoop one third of the caramel. Top the caramel with another ¼ of the cashew ice cream and another 1/3 of the caramel. Repeat until you finished with an ice cream layer. Cover and freeze for at least 6 hours or until firm.
  4. Before serving, place in the refrigerator for 30 minutes so it can soften.

Helado de Nuez de la India con Caramelo Salado

Para el caramelo salado
  1. 14 dátiles Medjool, sin hueso
  2. 3-4 Cucharadas agua tibia
  3. ½ cucharadita sal de mar
  4. 1 Cucharada Sheridan (licor de café y crema)
Para el helado
  1. 1 ½ taza de nueces de la India (remojadas en agua fría durante 4-6 horas)
  2. 450 ml de leche de almendra sabor vainilla
  3. 3 Cucharadas de aceite de coco, derretido
  4. ½ taza miel de maple
  5. 2 cucharaditas extracto de vainilla
  6. Una pizca de sal
Para el caramelo salado
  1. Añade los dátiles a un procesador de alimentos, pulsa hasta que tenga una consistencia cremosa y suave. Añade agua hasta que tenga una consistencia de caramelo espeso. Añade la sal y el Sheridan, y mezcla para combinar. Reserva.
Para el helado
  1. Escurre las nueces de la India. En una licuadora de alta potencia, mezcla las nueces de la India, leche de almendras, aceite de coco, miel de maple, vainilla y la sal, mezcla hasta que quede cremoso y suave. Transfiere a un recipiente hermético y refrigera por lo menos 6 horas o toda la noche.
  2. Vierte en la máquina para hacer helados y bate de acuerdo a las instrucciones del fabricante.
  3. Una vez batido, coloca 1/4 del helado de nueces de la India en el fondo de un recipiente hermético, a continuación, coloca un tercio del caramelo. Arriba del caramelo, coloca otro cuarto del helado otro tercio del caramelo. Repite hasta terminar con una capa de helado. Cubre y congela durante al menos 6 horas o hasta que esté firme.
  4. Antes de servir, coloca en el refrigerador durante 30 minutos por que este suave.
