Avocado Brownies – Brownies de Aguacate Since this month I’m trying to share Mexican recipes, I decided to bake some brownies. I know they aren’t consider part of  Mexican cuisine (even though we love to eat them), but I added a very Mexican ingredient: the avocado.

Avocado Brownies – Brownies de Aguacate When I was little, I loved preparing the typical box brownies, and even though you just need to add egg, milk and butter, I felt like a culinary expert. But lately I’ve let the box brownies aside, and now I like experimenting with healthier versions. So far I’ve made brownies with spinach, sweet potatoes and black beans.

Avocado Brownies – Brownies de Aguacate It is a difficult recipe to prepare at my house. My husband really hates avocado, but he loves brownies. I decided to prepare them on Thursday, knowing that he was coming home late. When he arrived, he said the house smelled super delicious. I told him he would have to wait before trying the brownies, because they had to cool completely before I could cut them (usually I let them cool overnight).

Avocado Brownies – Brownies de Aguacate Avocado Brownies – Brownies de Aguacate Yesterday morning was time for cutting the brownies, so I gave him one so he could have it for lunch. He said goodbye, and I began to assemble everything I needed in order to take the pictures. As I used only half an avocado for the recipe, I kept the other half in the fridge to use it as a prop in the photos. As he was no longer in the house, I put the avocado in the table beside the brownies, but he forgot his bottle of water! He entered very rapidly, just looking for his bottle, but he did see the avocado half, he just exclaimed “Noooo!!!! They have avocado”. I think I’ll stay with 15 pieces of brownie for myself.

Avocado Brownies – Brownies de Aguacate I really liked them. At first I had doubts about the amount of cocoa, but I think that helps to dull the avocado flavor (or insect flavor as my husband would say), and it gives them a super chocolatey flavor. Of all the ingredients I have used to make brownies, I think this is the one with more logic; it acts as a substitute for butter, so we’re changing a type of fat for a much healthier option. Besides using avocado makes them vegan brownies.

A mí me encantaron.

Ingredients
  1. 1 Tablespoon flaxseed meal
  2. 3 Tablespoons warm water
  3. ¾ cup all-purpose flour
  4. ¾ cup unsweetened cocoa powder
  5. ½ teaspoon baking powder
  6. ½ teaspoon spirulina powder
  7. ¼ teaspoon salt
  8. ½ ripe avocado, pitted, peeled and mashed until smooth
  9. ½ cup coconut oil
  10. ¼ cup hot water
  11. 1 teaspoon vanilla extract
  12. ½ cup brown sugar
  13. 1 teaspoon baking soda
  14. 1 Tablespoon apple cider vinegar
  15. 1 cup semisweet chocolate chips
Instructions
  1. Preheat oven to 180°C (350°F). Lightly coat with coconut oil, the bottom and sides of a 23 cm (9 inch) square baking pan. Cut a piece of parchment to cover the bottom of the pan.
  2. First lets make the “flaxseed egg”. In a small bowl, combine the flaxseed meal and hot water; set aside to coagulate.
  3. In a medium bowl, whisk together flour, cocoa powder, baking powder, spirulina, and salt. Set aside.
  4. In a large bowl, using an electric mixer, beat the avocado, water, coconut oil, and vanilla extract. Add the brown sugar and beat to combine until the avocado is smooth. Add the dry ingredients to the wet, and beat well to combine.
  5. In a small bowl, combine the baking soda and apple cider vinegar. When the mixture fizzes, stir it into the brownie batter along with the coagulated flaxseeds. Gently fold in the chocolate chips.
  6. Spread the batter in the baking pan. Bake for 25-30 minutes, or until the sides of the brownies are dry and pulling away from the pan and the center resists light pressure. Transfer to a cooling rack and let it cool completely. Cut into 16 pieces.
  7. Enjoy!

Ingredients
  1. 1 cucharada harina de linaza
  2. 3 cucharadas agua tibia
  3. ¾ taza harina
  4. ¾ taza cacao en polvo sin azúcar
  5. ½ cucharadita polvo de hornear
  6. ½ cucharadita espirulina en polvo
  7. ¼ cucharadita sal
  8. ½ aguacate maduro, sin hueso, pelado y hecho puré
  9. ½ taza aceite de coco
  10. ¼ taza agua caliente
  11. 1 cucharadita extracto vainilla
  12. ½ taza azúcar morena
  13. 1 cucharadita bicarbonato de sodio
  14. 1 cucharada vinagre de manzana
  15. 1 taza chispas de chocolate semiamargo
Instructions
  7. ¡ A disfrutar!
