The first recipe of Christmas cookies are these delicious cookies of Italian origin with hazelnuts and coffee.

Although we are coffee lovers, we don’t have a Nespresso machine, and for a few moments I thought about giving away the coffee they gave us. But then I thought about opening one capsule and use the coffee in this recipe. I used the Sachertorte variation, because I think it’s the best combination of aromas and flavors for this cookies. I think I nailed it 🤓.

La receta que les comparto no es la receta original. Inicialmente sólo llevaban cuatro ingredientes, donde el café, la harina y la mantequilla no figuraban como ingredientes. Las galletas de avellana y café son crujientes, frágiles y ¡de-li-cio-sas!. For the cookies
  1. 1 cup whole hazelnuts
  2. 90 grams (3.17 oz) sugar
  3. 1 teaspoon instant espresso powder
  4. ¼ teaspoon salt
  5. 240 grams (8.5 oz) unsalted butter, cut into cubes and slightly softened
  6. 250 grams (8.8 oz) all-purpose flour
For coating
  1. ½ cup sugar
  2. ½ teaspoon ground cinnamon
Instructions
  1. Preheat the oven to 200°C (400°F). Spread the hazelnuts on a large rimmed baking sheet and toast for about 12 minutes, until the nuts are fragrant and the skins blister. Transfer the hazelnuts to a kitchen towel and let cool, then rub them together to remove their skins.
  2. In a food processor, pulse the hazelnuts with the sugar until coarsely ground. Add the espresso powder and salt, pulse until finely ground. Do not over process or you'll end up with hazelnut butter.
  3. Add the butter and pulse until it becomes a smooth mixture. Sprinkle the flour and pulse until perfectly incorporated.
  4. Scrape the dough onto a piece of plastic wrap, form it into a disk, wrap, and refrigerate for at least 2 hours.
  5. Preheat the oven to 160°C (325°F). Line two baking sheets with parchment paper or silicon mats.
  6. Divide the dough into quarters. Divide each quarter into 12 equal pieces. Using your palms, roll each piece between your palms to form balls. Then roll each ball into an 8 cm long (3 inch) cylinder, tapering the ends slightly.
  7. Put the cylinders about 5 cm (2 inches) apart on a baking sheet and curve the ends to make crescent shapes. Bake until golden around the edges and light golden on top, 20 to 23 minutes. Let the cookies cool for 10 minutes.
  8. Meanwhile put the coating ingredients, sugar and cinnamon, in a small bowl. Gently toss the cookies in the sugar to coat; let them cool completely on racks.
  9. Enjoy!

Para las galletas
  1. 1 taza de avellanas enteras
  2. 90 gramos (3.17 oz) azúcar
  3. 1 cucharadita polvo de espresso instantáneo
  4. ¼ cucharadita de sal
  5. 240 gramos (8.5 oz) mantequilla sin sal, cortada en cubos y ligeramente suavizada
  6. 250 gramos (8.8 oz) harina para todo uso
Para la cobertura
  1. ½ taza azúcar
  2. ½ cucharadita canela molida
Instructions
  1. Precalienta el horno a 200° C (400° F). Extiende las avellanas en una charola para hornear y tuesta durante unos 12 minutos, hasta que las nueces estén olorosas y las pieles se empiecen a abrir. Transfiere las avellanas a una toalla de cocina y deja enfriar. Frota para quitar las pieles.
  2. En un procesador de alimentos, pulsa las avellanas con el azúcar hasta que se muelan ligeramente. Añade el espresso en polvo y la sal, pulveriza hasta que esté finamente molido. No pulses demasiado o terminarás con mantequilla de avellana.
  3. Añade la mantequilla y pulso hasta obtener una mezcla suave. Espolvorea la harina y pulsa hasta que esté perfectamente incorporada.
  4. Vacía la masa en un trozo de plástico, fórmala en un disco, envuelve y refrigera durante al menos 2 horas.
  5. Precalienta el horno a 160 ° C (325 ° F). Coloca papel para hornear o tapetes de silicón en dos charolas para hornear.
  6. Divide la masa en cuartos. Divide cada cuarto en 12 piezas iguales. Usando tus palmas, forma bolitas con cada pedazo. A continuación, rueda en tus palmas cada bola para formar un cilindro de 8 cm de largo (3 pulgadas), pinchando los extremos ligeramente.
