When you bite into them, it’s like if you were chewing on a piece of cardboard, and they are always super dry. I think that kind of burgers give a bad reputation to the real veggie burgers.

Me gustan mucho las hamburguesas a base de verduras o legumbres, hechas en casa, pero no aguanto las hamburguesas vegetarianas que ahora se pusieron de moda en muchos restaurantes. Parece que estás mordiendo un pedazo de cartón y siempre están súper secas. Their texture is very good, you can almost turn them without them falling apart (a big problem with veggie burgers), and their flavor is quite balanced, you can hardly tell that you are eating chickpeas.

Encontré una receta para preparar unas hamburguesas a base de garbanzos y me anime a probarlas. ¡Quedaron muy ricas! Ocho hamburguesas para dos personas es mucho, imagínate sería una semana completa de comer puras hamburguesas, pero te recomiendo que prepares la receta completa y congeles los sobrantes. Quedan súper bien, y cuando no tengas tiempo de cocinar, sólo tienes que descongelar y ¡listo! Ingredients
  1. 3 cups baby spinach
  2. 1 yellow onion, finely chopped
  3. 1 Tablespoon minced garlic
  4. 1¼ cups vegetable broth
  5. ½ cup brown rice
  6. 425 grams (1 can 15-oz.) chickpeas, drained, rinsed, and patted dry
  7. ½ cup crushed corn flakes
  8. ¼ chopped fresh parsley
  9. ¼ cup sunflower seeds, chopped
  10. Zest of two limes
  11. 2 tablespoons fresh lime juice
  12. ½ teaspoon ground cumin
  13. 1 teaspoon ground coriander
  14. Kosher salt and freshly ground black pepper
  15. 1 egg, beaten
Instructions
  1. In a medium skillet, heat 1 teaspoon of olive oil over medium heat. Add the spinach and cook until wilted, 1 to 2 minutes. Transfer to a sieve, let cool slightly, and press to remove as much liquid as possible. Chop, transfer to a large bowl, and set aside.
  2. In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and cook, stirring occasionally, until slightly browned around the edges. Add the garlic and cook, stirring constantly. Add the broth and the brown rice, bring to a boil. Cover, and reduce the heat to a steady simmer. Cook until the brown rice is tender and the broth is absorbed, about 20-25 minutes. Set aside to cool for 10 minutes.
  3. To the bowl with the spinach, add the brown rice, chickpeas, corn flakes, parsley, sunflower seeds, lime juice and zest, cumin and coriander. Mash with a potato masher until the chickpeas are mashed but still a little chunky. Season to taste with salt and pepper. Add the egg and stir well. Chill the burger mixture for at least 30 minutes.
  4. Portion the burger mixture into 8 balls. With moist hands, form into patties.
  5. Heat around 2 Tablespoons of olive oil in a medium nonstick skillet over medium heat. Add the burgers and cook until browned on one side. Gently flip with a thin spatula and cook until browned and heated through.
  6. Enjoy!

  1. 3 tazas espinaca baby
  2. 1 cebolla amarilla, finamente picada
  3. 1 cucharada ajo picado
  4. 1¼ tazas caldo de verduras
  5. ½ taza arroz integral
  6. 425 gramos (1 frasco de 15-oz.) garbanzos, escurridos y enjuagados, y secos
  7. ½ taza Corn Flakes triturados
  8. ¼ perejil fresco, finamente picado
  9. ¼ taza semillas de girasol, picadas
  10. Ralladura de dos limones
  11. 2 cucharadas de jugo de limón fresco
  12. ½ cucharadita comino molido
  13. 1 cucharadita cilantro molido
  14. Sal kosher y pimienta recién molida negro
  15. 1 huevo batido
Instructions
  1. En una sartén mediana, calienta 1 cucharadita de aceite de oliva a fuego medio. Añade las espinacas y cocina hasta que se ablanden, de 1 a 2 minutos. Pasa a un colador, deja enfriar un poco, y presiona para eliminar la mayor cantidad de líquido posible. Corta en rebanadas finas, traslada a un tazón grande, y deja a un lado.
  2. En la misma sartén, calienta 1 cucharada de aceite de oliva a fuego medio. Agrega la cebolla y cocina, revolviendo ocasionalmente, hasta que estén ligeramente doradas en los bordes. Agrega el ajo y cocine, revolviendo constantemente. Añade el caldo y el arroz integral, lleva a ebullición. Cubre y reduce el fuego, deja cocinar manteniendo un leve hervor constante. Cocina hasta que el arroz esté tierno y el caldo se haya absorbido, unos 20-25 minutos. Deja enfriar por 10 minutos.
  3. Al recipiente con las espinacas, añade el arroz, garbanzos, corn flakes, perejil, semillas de girasol, el jugo de limón y la ralladura, el comino y cilantro. Aplasta con un machacador de frijoles hasta que se deshagan los garbanzos, pero todavía mantengan un poco de su forma. Sazona al gusto con sal y pimienta. Añade el huevo y mezcla bien. Refrigera la mezcla de hamburguesas durante al menos 30 minutos.
  4. Porciona la mezcla de hamburguesas en 8 bolas. Con las manos húmedas, forma ocho hamburguesas.
  5. Calienta alrededor de 2 cucharadas de aceite de oliva, a fuego medio, en una sartén mediana antiadherente. Agrega las hamburguesas y cocina hasta que doreen por un lado. Voltea suavemente con una espátula delgada y cocina hasta que estén doradas y bien calientes.
  6. ¡A disfrutar!
