Matcha Vegan Loaf Cake – Panqué Vegano de Té Matcha I always try to cook something green on St. Patrick’s Day, last year I made some delicious chocolates and two years ago, a green tea bread. This year I was traveling on that date and could not prepare anything special for that day, but I did not want it to end March without preparing something green.

Everyone has a reason to follow a vegan diet, in my case I look for healthy and nutritious food, and I prefer to use the most natural ingredients. In this bread I used a banana mixed with a little butter, instead of using large amounts of butter, even vegan.

En la repostería vegana he visto que utilizan grandes cantidades de mantequilla vegana. Cada quien tiene su razón para seguir una dieta vegana, en mi caso busco alimentos saludables y nutritivos, y prefiero utilizar los ingredientes más naturales posibles. Me falta experimentar un poco más, pero algo que he notado con los panqués o pasteles que utilizan huevos de linaza, es que al momento de hornearlos no se “alisan”, quedan pequeñas protuberancias en las superficie. This Matcha loaf cake has a compact and moist texture. It has a slight taste of Matcha, despite the 2 tablespoons. I think Matcha flavor is more prevalent just after a couple of days after baking, I have noticed that over time it kind of loses the Matcha flavor (is it normal?). It is quite delicious, perfect for breakfast.

Lo más importante es el sabor de lo que preparas. Es un panqué con una textura compacta y húmeda. Tiene un ligero sabor a Matcha, a pesar de las 2 cucharadas. El sabor a Matcha es más predominante los primeros días de horneado, he notado que con el tiempo pierde el sabor a Matcha (¿será normal?). Es bastante rico, ideal para acompañar el desayuno.

Ingredients
  1. 220 grams (7.76 oz) all-purpose flour
  2. 2 Tablespoons Matcha
  3. ½ teaspoon baking powder
  4. 1 teaspoon baking soda
  5. ¼ teaspoon salt
  6. 60 grams (2.12 oz) unsalted vegan butter, softened
  7. 1 medium banana, smashed
  8. 60 grams (2.12 oz) sugar
  9. 1 teaspoon vanilla extract
  10. 2 flax eggs (2 Tablespoons ground flax seeds + 4 Tablespoons water)
  11. ½ cup + 2 Tablespoons unsweetened almond milk
Instructions
  1. Preheat oven to 180°C (350°F). Grease and flour one loaf pan 23 × 13 × 7.5 cm (9 x 5.1 x 3 inches).
  2. In a medium bowl, combine flour, Matcha, baking powder, baking soda and salt.
  3. In a big bowl, using a whisk, blend the butter with the banana. Add the sugar and beat until fluffy. Add the vanilla extract and the flax eggs. Mix well.
  4. Add the flour mixture and the almond milk, alternating the two until combined.
  5. Pour the batter into the prepared pan. Smooth the surface with a straight spatula. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan. Transfer to a cooling rack and let cool.
  7. Enjoy!

Ingredients
  1. 220 gramos (7.76 onzas) harina
  2. 2 cucharadas de té Matcha
  3. ½ cucharadita polvo de hornear
  4. 1 cucharadita bicarbonato de sodio
  5. ¼ cucharadita sal
  6. 60 gramos (2.12 onzas) mantequilla sin sal vegetariana, suavizada
  7. 1 plátano mediano, aplastado
  8. 60 gramos (2.12 oz) azúcar
  9. 1 cucharadita extracto de vainilla
  10. 2 huevos de linaza (2 cucharadas de semillas de linaza molidas + 4 cucharadas de agua)
  11. ½ taza + 2 cucharadas leche de almendras sin endulzar
Instructions
  1. Precalentar el horno a 180° C (350° F). Engrasar y enharinar un molde de 23 × 13 × 7,5 cm (9 x 5,1 x 3 pulgadas).
  2. En un tazón mediano, combina la harina, té Matcha, polvo de hornear, bicarbonato y la sal.
  3. En un tazón grande, utilizando un globo, mezclar la mantequilla con el plátano. Añade el azúcar y bate hasta que quede esponjoso. Agrega el extracto de vainilla y los huevos de linaza. Mezcla bien.
  4. Añade la mezcla de harina y la leche de almendras, alternando los dos hasta que se mezclen.
  5. Vierte la mezcla en el molde preparado. Alisa la superficie con una espátula recta. Hornea durante 35-40 minutos o hasta que un palillo insertado en el centro salga limpio.
  6. Deje que el panqué se enfríe en el molde. Transfiere a una rejilla y deja enfriar.
  7. ¡A disfrutar!
