In Mexico we have a variety of breads, but bagels don’t make any appearance in that long list. I think I’ve never seen a bagel in a bakery, and I haven’t seen any bagels stores like in New York. The only option we have available is to buy a bag of frozen bagels. I admit that for many years I was a fan of those bagels … until I started reading the ingredients list.

Creo que nunca he visto que vendan un bagel en una panadería, y no he visto ninguna tienda especializada en bagels como en Nueva York. A few months ago I was about to fall into temptation and buy frozen bagels, but I decided to investigate on how to prepare them at home. I had no idea that first they have to be poach in water and then baked. Besides their taste, I wanted to try this curious preparation technique.

Hace unos meses estuve a punto de caer en la tentación y comprar bagels congelados, pero decidí mejor investigar cómo prepararlos en casa. No tenía ni idea de que primero se escalfan en agua y después se hornean. Además del sabor, quería probar esa curiosa técnica de preparación.

That’s why bagels have a dense texture and a soft crust. This way of making bread has its origin in the Jewish community in Austria, where they became known as “beugeln” meaning bagel. So often they are known as Jewish bagels, instead of New York style bagels. Other styles of bagels are baked without poaching.

La ciencia detrás del escalfado es que al humedecer en agua el exterior de la masa, se está impidiendo que el pan quede crujiente al hornearlo. Por eso los bagels tienen una textura densa y una corteza blanda. Esta forma de preparar el pan tiene su origen en la comunidad judía de Austria, donde se conocían como “beugeln” que significa rosquillas. Por eso muchas veces se conocen como bagels judíos, en lugar de bagels estilo Nueva York. Los demás bagels son horneados directamente.

B6Ok, ok … I admit that making these New York style bagels, is a bit time-consuming and it takes some patience. But after giving a bite to a freshly baked bagel, you forget all the effort. For me it is quite therapeutic to make homemade bread … maybe I am a rare person 😜.

For the sponge
  1. 4 cups (615 grams) bread flour
  2. 3 teaspoons fresh yeast
  3. 2½ cup warm water
For the bagels
  1. 1½ teaspoon fresh yeast
  2. 3 cups (462 grams) bread flour
  3. 1 Tablespoon salt
  4. 1 Tablespoon honey or brown sugar
  5. 1 Tablespoon baking soda
  6. Cornmeal
Optional Toppings
  1. Poppy seeds, coarse salt and sesame seeds
For the sponge
  1. In the bowl of a stand mixer, combine the bread flour and the fresh yeast. Pour in the warm water, and stir until it forms a smooth, sticky dough. Cover with plastic wrap and leave at room temperature until bubbly and double in size, 1-2 hours.
For the bagels
  1. Remove the plastic and stir the sponge with the fresh yeast. In a bowl, mix the flour with the salt. Add it to the sponge, along with the honey or sugar. Using a dough hook, mix on the lowest speed, knead until the dough is stiff, dry, and almost satiny. Depending on where you live, you may need extra flour (½ -1 cup) or water (2 Tablespoons – ¼ cups water). To check the dough, pinch off a small piece and gently stretch it while turning it. It should form a thin, translucent membrane. If it rips, the dough hasn’t been kneaded enough or else it’s too dry and needs a few drops of water.
  2. Divide the dough into 12 pieces, each weighing 130 grams (4.75 oz). Shape each piece into a round by pulling the dough down and around to the bottom and then pinching the bottom closed. Cover with a damp towel and let rest for 20 minutes.
  3. Line two baking sheets with parchment paper or with silicone mats. Coat a finger in flour, and gently press your finger into the center of each dough ball to form a ring. Stretch the hole to about 5 centimeters (2 inches) in diameter and place on the baking sheets, 5 centimeters (2 inches) apart. Cover with plastic wrap and let them rest at room temperature for 20 minutes.
  4. Refrigerate the baking sheets, still covered, for at least 8 hours, or up to two days.
  5. When you’re ready to bake the bagels, heat the oven to 230°C (445°F). Bring a large pot of water to a boil and add the baking soda; remove one baking sheet of bagels from the refrigerator. Using a slotted spoon, gently drop the bagels into the water; they should float within 10 seconds or immediately. Boil for 1 minute, flip them over to boil for another minute.
  6. Line the baking sheet with a clean parchment paper, mist with vegetable oil, and sprinkle with cornmeal. As the bagels finish cooking, lift them out with the slotted spoon and set them on the baking sheet. Sprinkle with salt, sesame seeds or poppy seeds.
  7. Bake for 15 minutes, rotate the pan for even browning, and then continue baking until golden brown on top, approximately another 10-15 minutes. Remove the pan from the oven and transfer the bagels to a cooling rack. Let cool for at least 10 minutes. Meanwhile, remove the second pan of bagels from the fridge and boil and bake them the same way.

Para la masa madre

  1. En el tazón de una batidora de pie, combina la harina y la levadura fresca. Vierte el agua caliente, y mezcla hasta que se forme una masa suave y pegajosa. Cubre con papel plástico y deja a temperatura ambiente hasta que haga burbujas y duplique su tamaño, 1-2 horas.
Para los bagels
  1. Retira el plástico y mezcla la masa madre con la levadura fresca. En un bol, mezcla la harina con la sal. Añade a la masa madre, junto con la miel o el azúcar. Con el gancho, mezcla en la velocidad más baja, amasando hasta obtener una masa dura, seca, y casi satinada. Dependiendo de dónde vivas, puede que necesites más harina (½ - 1 taza) o agua (2 cucharadas - ¼ taza de agua). Para comprobar la masa, retira una pequeña pieza y estira suavemente mientras la haces girar. Se debe formar una membrana delgada y translúcida. Si se rompe, la masa no se ha amasado suficiente o esta seca y necesita unas gotas de agua.
  2. Divide la masa en 12 piezas, cada una de 130 gramos (4,75 onzas). Forma una bola con cada pieza tirando de la masa hacia abajo y alrededor de la parte inferior y luego pellizcando la parte inferior para cerrar. Cubre con una toalla húmeda y deja reposar durante 20 minutos.
