In the last past days, the hot weather in Mexico City has been unbearable! People from other states laugh that we complain when we reach 32°C (90°F), when usually they have temperatures above 40°C (104°F). But try to understand us, we are used to a milder climate and these days are a little desperate. In addition we have to add traffic and pollution.

¡El calor en la Ciudad de México ha estado insoportable! En muchos otros estados les da risa que nos quejemos por llegar a los 32°C, cuando ellos alcanzan temperaturas arriba de los 40°C. Pero entiéndanos un poquito, estamos acostumbrados a un clima más templado así que estos días son un poco desesperantes. Además le tenemos que agregar el tráfico y la contaminación. When it comes to food, refreshing dishes are desired, mainly because they are quick to prepare and you don’t have to stand in front of the heat for a long period of time. So I decided to make ice pops to have for a refreshing dessert, and of course to take advantage of the fruits that are in seasonal right now.

A la hora de la comida se antojan platillos refrescantes, y que sean rápidos de preparar para no estar mucho tiempo enfrente de una estufa o un horno. Así que decidí preparar unas paletas heladas para tener un postre refrescante, y de paso aprovechar las frutas de temporada. On Sunday, in the organic market, I found some peaches that looked super good 🍑. Immediately I remember one of my favorite combinations: peaches and chamomile. In fact it was one of the first recipes I shared in Sweet Cannela. And this is how these delicious peach and chamomile ice pops were born.

El domingo, en el mercado orgánico, me encontré unos duraznos que estaban buenísimos 🍑. Inmediatamente me acorde de una de mis combinaciones favoritas: duraznos y manzanilla. De hecho fue una de las primeras recetas que les compartí. Así nacieron estas deliciosas paletas heladas de durazno y manzanilla que hoy les comparto. They have an acidic flavor that I love. First I made a syrup infused with chamomile, then I cooked the peaches in this syrup and blend it. The last step was to place the mixture in ice pop molds, froze them and ready! Without doubt they are perfect for these hot days, super refreshing and delicious 😋.

Tienen un sabor acidito que me encanta. Primero hice un jarabe infusionado con la manzanilla, después cocine los duraznos en este jarabe y lo licue. El último paso fue colocar la mezcla en moldes para paletas, congelarlos y ¡listo! Sin duda son unas paletas ideales para estos días calurosos, súper refrescantes y riquísimas 😋. 

Peach & Chamomile Ice Pops

Ingredients
  1. 1½ cup water
  2. ½ cup granulated sugar
  3. ⅓ cup fresh chamomile flowers
  4. 450 grams (16 oz) peaches, cut in half and pitted
  5. 1 Tablespoon fresh lime juice
Instructions
  1. In a medium saucepan, over medium heat, place the sugar and water. Cook until the sugar is completely dissolved. Add the chamomile flowers, reduce heat and simmer for 10 minutes. Remove from heat and let sit for 10 minutes. Strain the mixture through a fine-mesh sieve, extracting as much liquid as possible from the chamomile flowers. Return the syrup to the saucepan.
  2. Add the peaches to the saucepan and cook on medium heat for 10 minutes or until the peaches are super soft and start to broke down. Remove from the pan and let cool to room temperature.
  3. Add the lime juice and blend until a smooth.
  4. Distribute the fruit mixture among ice pop molds (The number of pops will depend on the capacity of your molds, I ended up with 7 ice pops). Insert sticks and freeze until the pops are fully set, 4-6 hours.
  5. Enjoy!

Paletas Heladas de Durazno y Manzanilla

Ingredients
  1. 1½ taza agua
  2. ½ taza azúcar
  3. ⅓ taza flores de manzanilla fresca
  4. 450 gramos (16 onzas) duraznos, cortados a la mitad y sin hueso
  5. 1 cucharada jugo de limón fresco
Instructions
  1. En una olla mediana, a fuego medio, coloca el azúcar y el agua. Cocina hasta que el azúcar esté completamente disuelta. Añade las flores de manzanilla, reduce el fuego y cocina a fuego lento durante 10 minutos. Retira del fuego y deja reposar durante 10 minutos. Cuela la mezcla a través de un colador de malla fina, extrayendo el mayor líquido posible de las flores de manzanilla. Regresa el jarabe a la olla.
  2. Añade los duraznos a la olla y cocina a fuego medio durante 10 minutos o hasta que los duraznos estén súper suaves y empiecen a romperse. Retira la olla del fuego y deja enfriar a temperatura ambiente.
  3. Agrega el jugo de limón y licua hasta que esté suave.
  4. Distribuye la mezcla de frutas entre los moldes de paletas (El número de paletas dependerá de la capacidad de sus moldes, yo terminé con 7 paletas). Inserta los palillos y congela hasta que listos, 4-6 horas.
  5. ¡A disfrutar!
