Eggplant Parmesan Soup – Sopa Berenjenas a al ParmesanaEggplant Parmesan, is not as very well-known dish in Mexico, but since I tried it a few years ago, I really liked the taste. Lately I’ve seen a lot of eggplants in the supermarket, I bought one thinking of doing the typical Eggplant Parmesan, when I found the recipe for a soup with the same ingredients of this typical Italian dish.

Aunque en México las berenjenas a la parmesana, no son un platillo tan conocido, desde que lo probé hace algunos años, me gustó mucho su sabor. Últimamente he visto muchas berenjenas en el súper, compre una pensando en hacer las típicas berenjenas a la parmesana, cuando me encontré con la receta para preparar una sopa con los mismos ingredientes de ese platillo tan típico de Italia. Eggplant Parmesan Soup – Sopa Berenjenas a al ParmesanaI really liked its taste. You definitely know that it’s a soup with an Italian origin, where the flavors of tomato, basil and Parmesan cheese, are perfectly balanced with the flavor of the eggplant. I don’t know why, but I really like soups that are thicken with stale bread, apparently it is a Mediterranean tradition.

Me gustó mucho su sabor final. Definitivamente sabes que se trata de un sopa de origen italiano, donde predominan los sabores del jitomate, albahaca y del queso parmesano, perfectamente balanceado con el sabor de la berenjena. We really liked its taste, and it’s always good to find a different soup, to give variety to the typical vegetable or pasta soup.

La sopa de berenjenas a la parmesana, es una sopa con una consistencia espesa, que puedes adaptar a tu gusto. A nosotros nos gustó mucho su sabor, y siempre es bueno encontrar una sopa diferente para darle variedad a la típica sopa de verduras o de pasta. Eggplant Parmesan Soup – Sopa Berenjenas a al ParmesanaYou can serve it by itself or with a variety of accompaniments, we liked it with homemade croutons, a little bit of freshly grated Parmesan cheese and freshly ground black pepper. Other ideas that come to mind are diced tomatoes with a sprinkle of oregano.

La puedes servir sola o con varias guarniciones, a nosotros nos gustó con crotones hechos en casa, con un poco de parmesano recién rallado y pimienta negra recién molida. Otras ideas que se nos ocurren son cuadritos de jitomate, rociados con un poco de orégano.

 

Eggplant Parmesan Soup

Ingredients
  1. 1 tablespoon extra-virgin olive oil
  2. 1 medium onion, chopped
  3. 2 medium garlic cloves, smashed and minced
  4. 1 large eggplant, diced
  5. 350 grams (12 oz) diced tomatoes
  6. 350 grams (12 oz) water (I used the same container of the diced tomatoes to measure it)
  7. 1 cup stale bread, diced
  8. ½ cup fresh basil, chopped
  9. ¾ cup freshly grated Parmesan cheese
  10. 1 tablespoons white wine vinegar
  11. 1½ teaspoon salt
  12. ¼ teaspoon black pepper
Instructions
  1. In a large saucepan, heat the olive oil over high heat. Add onions and garlic, cook until the onions start to soften. Add the eggplant and reduce to medium heat. Cook, stirring occasionally, for 10 minutes, or until the eggplant becomes slightly mushy.
  2. Add the tomatoes and water. Bring to a simmer over medium heat, for about 5 minutes. Add the bread and stir for 1 minute, or until the bread breaks down. Stir in the basil and Parmesan, turn off heat and let cool slightly.
  3. Transfer to a blender, and blend, in small batches, until it has a smooth and homogeneous consistency. Return soup to the saucepan and bring to a simmer. Season with vinegar, salt and pepper. If soup seems too thick, thin with a little water (I added 2 cups). Taste and adjust seasoning.
  4. Enjoy!

Ingredients
  1. 1 cucharada aceite oliva extra virgen
  2. 1 cebolla mediana, picada
  3. 2 dientes de ajo medianos, aplastados
  4. 1 berenjena grande, cortada en cubitos
  5. 350 gramos (12 oz) jitomates en cubos
  6. 350 gramos (12 onzas) agua (para medirla, yo usé el mismo envase de los tomates en cubos)
  7. 1 taza pan duro, cortado en cubitos
  8. ½ taza albahaca fresca, picada
  9. ¾ taza queso Parmesano recién rallado
  10. 1 cucharada vinagre de vino blanco
  11. 1½ cucharadita sal
  12. ¼ cucharadita pimienta negra
Instructions
  1. En una olla grande, calienta el aceite de oliva a fuego alto. Agrega la cebolla y el ajo, cocina hasta que las cebollas comienzan a ablandarse. Añade la berenjena y reduce a fuego medio. Cocina, revolviendo de vez en cuando, durante 10 minutos, o hasta que la berenjena se ablanda y empieza a deshacerse.
  2. Agrega los jitomates y el agua. Hierve a fuego lento durante unos 5 minutos. Añade el pan y mezcla durante 1 minuto, o hasta que el pan se rompa. Agrega la albahaca y el Parmesano, apaga el fuego y deja que se enfríe un poco.
  3. Transfiere a una licuadora y licua, en pequeñas cantidades, hasta que tenga una consistencia suave y homogénea. Regresa la sopa a la olla y hierve a fuego lento. Sazona con vinagre, sal y pimienta. Si la sopa se te hace muy espesa, agrega un poco de agua (yo agregué 2 tazas). Prueba y ajusta la sazón.
