Date and Pecan Soft CookiesOne of the things I like about the holiday season, is that we can find so many dried fruits and nuts. For example, at this time of the year, the dates are really good, and although they are a bit expensive, I decided to prepare some soft cookies with Medjool dates and pecans.

Una de las cosas que me gusta de la época navideña, es que podemos encontrar muchas frutas y frutos secas. Por ejemplo, en esta época los dátiles están en su punto, y aunque son un poco caros, decidí preparar unas galletas suavecitas con pedacitos de dátiles y nueces pecanas.  Date and Pecan Soft CookiesAlthough they are not the typical cookies we associate with the holiday season, they are really delicious and quite healthy. There are no eggs and they call for very little sugar, most of the sweetness of the cookies is thanks to the dates. The cookies don’t have a very sweet taste.

Aunque no son las típicas galletas que asociamos con la época navideña, son muy ricas y bastante saludables. No llevan huevo y se utiliza muy poca azúcar, la mayoría del dulzor se lo dan los dátiles, así que son unas galletas no muy dulces.  Date and Pecan Soft CookiesThe original recipe was to prepare muffins, but I wanted a smaller dessert, a bite-size type, so I decided to make soft cookies. The dough can be put directly on a baking sheet or in a cookie pan. I used a cookie pan with snowflakes, but in the final cookie the snowflake image doesn’t look so good.

La receta original era para preparar muffins, pero quería un postre más pequeño, así que se me ocurrió hacer galletas suaves. Puedes poner la masa directo sobre una charola o en una charola con moldes para galletas. Yo utilice una charola con moldes de copos de nieve, aunque creo que no se ven muy bien los dibujos. Date and Pecan Soft CookiesAfter preparing the ginger and almond biscottis, which are quite hard, now I went to the opposite extreme with these super soft cookies. I have to have choices for all tastes, and as they say, it’s always good to eat a variety of different foods (although I think this rule doesn’t apply to cookies hahaha).

Después de preparar los biscottis de jengibre y almendras, que son bastante duros, ahora me fui al otro extremo con estas galletas súper suaves. Hay que tener opciones para todos los gustos, y como dicen, siempre es bueno comer una variedad de diferentes alimentos (aunque creo que esa regla no aplica para galletas jajaja) Date and Pecan Soft CookiesI think these date and pecan cookies, are a good choice for this holiday season. They are a healthier option compared to the typical cookies we usually eat at this time.

Ingredients
  1. 2 cups whole-wheat flour
  2. ½ teaspoon baking soda
  3. ½ teaspoon baking powder
  4. ½ teaspoon ground cinnamon
  5. ½ teaspoon salt
  6. 150 grams (5.29 oz) unsalted butter, at room temperature
  7. 1½ cups milk
  8. 90 grams (3.17 oz) pecan halves, toasted and chopped
  9. 250 grams (8.82 oz) Medjool dates, pitted and finely chopped
  10. 1 teaspoon vanilla extract
  11. 6 Tablespoon moscavado sugar
Instructions
  1. Preheat oven to 180°C (350° F). Line a baking sheet with parchment paper or a silicone mat. If you are using a cookie mold, grease the mold.
  2. In a medium bowl, sift the flour, baking soda, baking powder, cinnamon and salt. Set aside.
  3. In the bowl of a stand mixer, fitted with the paddle attachment, cream the butter until light and fluffy, about 3 minutes. Add one third of the flour mixture and mix. Add ¾ cups of milk and mix well. You can stop the mixer and scrape the sides of the bowl with a rubber spatula. Add the second third of the flour and the remaining ¾ cup of milk, mix. Scrape the sides of the bowl. Finally add the last third of the flour mixture and mix until incorporated.
  4. Fold the pecan halves and the dates.
  5. Scoop large tablespoons of dough onto the prepared baking sheet, leaving 5 cm (2 in) between them. If using a cookie mold, fill the spaces to 2/3 full. Bake for 15-20 minutes or until the cookies are golden brown around the edges. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
  6. Store cookies in an airtight container.
  7. Enjoy!

Ingredients
  1. 2 tazas de harina integral
  2. ½ cucharadita bicarbonato de sodio
  3. ½ cucharadita polvo para hornear
  4. ½ cucharadita canela molida
  5. ½ cucharadita de sal
  6. 150 gramos (5.29 onzas) mantequilla sin sal, a temperatura ambiente
  7. 1½ tazas de leche
  8. 90 gramos (3.17 onzas) nuez pecana, tostada y picada
  9. 250 gramos (8.82 onzas) dátiles Medjool, deshuesados y picados finamente
  10. 1 cucharadita extracto de vainilla
  11. 6 cucharadas azúcar morena
Instructions
  1. Precalienta el horno a 180°C (350°F). Cubre una charola para hornear con papel encerado o con un tapete de silicón. Si usas un molde para galletas, engrasa muy bien el molde.
  2. En un recipiente mediano, cernir la harina, el bicarbonato, el polvo de hornear, canela y la sal. Reservar.
  3. En una batidora, con el aditamento de pala, batir la mantequilla hasta que esté suave y esponjosa, unos 3 minutos. Añadir un tercio de la mezcla de la harina y mezclar. Añadir ¾ tazas de leche y mezclar bien. Puede detener la batidora y raspar los lados del tazón con una espátula de silicón Añadir el segundo tercio de la harina y el ¾ de taza de leche restante, mezclar. Raspe los lados del tazón. Por último añadir el último tercio de la mezcla de harina y mezclar hasta que se incorpore.
  4. Integrar las nueces y los dátiles.
  5. Tomar grandes cucharadas de masa y colocarlas en las charolas o en los moldes previamente preparados, dejando 5 cm (2 pulgadas) entre ellos. Si se utiliza un molde de la galleta, llenar los espacios a 2/3 de su capacidad. Hornear durante 15-20 minutos o hasta que las galletas estén doradas en los lados. Deje enfriar por 5 minutos, luego transferir a una rejilla para enfriar completamente.
  6. Almacenar las galletas en un recipiente hermético.
  7. ¡Disfruta!
