I have mentioned several times, that I don’t like traditional cheesecakes, but I have shared recipes with tofu instead of too much cream cheese. But this time I was in charge of preparing the dessert for the Father’s Day gathering with my husband’s family.  I know that his family really likes cheesecakes, at least when we go out to a restaurant, they always ask for dessert a cheesecake.

Aunque no lo crean, hoy les comparto la receta de una cheesecake. Varias veces he mencionado que no me gustan mucho los cheesecakes tradicionales, los que les he compartido tienen tofu en lugar de tanto queso crema. Pero en esta ocasión me toco preparar el postre para la comida del Día del Padre en casa de mi esposo, y sé que a su familia le gustan mucho los cheesecakes, al menos cuando vamos a algún restaurante siempre piden de postre un cheesecake. Mexican Chocolate Cheesecake – Cheesecake de Chocolate MexicanoI just bought the book Ovenly, and I am delighted with the recipes they share, especially with all the flavor combinations I would have never imagined. I noticed the chocolate cheesecake recipe, because I had never before tasted it. I wanted to add some of my favorite spices, so I decided to add cinnamon, cardamom and ginger; that’s why I called it Mexican Chocolate Cheesecake.

Acabo de comprar el libro de Ovenly, y estoy encantada con las recetas que tienen, sobre todo porque mezclan muchos sabores que nunca me hubiera imaginado. Me llamo la atención la receta del cheesecake de chocolate, la verdad nunca antes lo había probado. Quise darle un toque diferente  con una de las combinaciones que más me gustan, así que le añadí canela, cardamomo y jengibre; por eso lo apode como cheesecake de chocolate mexicano. Mexican Chocolate Cheesecake – Cheesecake de Chocolate MexicanoIt is definitely a dessert for chocolate lovers. Especially if you like creamy and compact desserts. I managed to keep the only slice that was left. I always say I use it to take photos and upload them to the blog, but I think people assume I’m greedy and I want to stay with the remaining of the dessert lol. I like taking pictures of the slices, because I think it’s important that you can see the texture of the cake.

Definitivamente es un postre para los amantes del chocolate. Sobre todo si te gustan los postres cremosos y compactos. Logré quedarme con la única rebanada que sobro. Siempre digo que es para tomarle foto y subirla al blog, pero creo que la gente piensa que soy una golosa y me quiero quedar con el postre jajaja. I’ve noticed that although more and more people seek healthier food options, there are still many that don’t care what they eat. They even like to mock and criticize, if they know I substitute one ingredient for another that is considered healthier. And to be honest, most of the time, preparing a healthy dessert, is much more expensive.

Como verán en la lista de ingredientes, no es exactamente un postre saludable como los que generalmente comparto. Me he dado cuenta que, aunque cada vez más personas buscan opciones de comida saludables, todavía existen muchas a las que no les importa lo que comen. Muchas veces hasta se burlan y critican si saben que substituiste un ingrediente por otro que es considerado como más saludable. This time it was the turn for this chocolate cheescake. When I was baking, it began to smell so good. I think that’s a big point in its favor, once ready, it smells delicious. I liked the taste and consistency of the small slice I tried. I feel that I’m no longer accustomed to sugary desserts, and probably that is why it tasted very sweet for me, but other people who tried it said nothing about the sweetness. Overall, I think it’s a good recipe to try.

Por eso de vez en cuando preparo postres “normales”. En esta ocasión le toco su turno al cheescake de chocolate. Cuando lo estaba horneando, empezó a oler súper rico. Pienso que ese es un gran punto a su favor, una vez ya listo, huele delicioso. Me gustó mucho el sabor y la consistencia de la rebanadita que probé. Siento que ya no estoy acostumbrada a los postres con mucha azúcar, y probablemente por eso se me hizo muy dulce, aunque las demás personas que lo probaron no dijeron nada. For the crust
  1. 84 grams (2.96 oz) unsalted butter, melted
  2. 2 Tablespoons sugar
  3. 213 grams (7.51 oz) finely ground graham cookies crumbs
For the filling
  1. 454 grams (16 oz) cream cheese, softened
  2. 250 grams (8.83 oz) sugar
  3. ½ cup cocoa powder
  4. ½ teaspoon ground cinnamon
  5. ¼ teaspoon ground cardamom
  6. ⅛ teaspoon ground ginger
  7. ⅛ teaspoon salt
  8. 2 eggs
  9. 1 teaspoon vanilla extract
For the topping
  1. 200 ml (6.76 fl oz.) sour cream
  2. 2 Tablespoon sugar
  3. ½ teaspoon vanilla extract
  4. ⅛ teaspoon salt
For the crust
  1. In a medium bowl mix the melted butter with the sugar and graham cookies crumbs. Press firmly and evenly into the bottom and a third of the way up the sides of a 20 cm (8 inches) spring-form pan. Freeze the crust for 30 minutes to set.
For the filling
  1. Preheat oven to 190°C (375°F).
  2. In a stand mixer with the paddle attachment, beat the cream cheese on medium speed, until fluffy, about 2 minutes. Scrape down the sides and add the sugar, cocoa, cinnamon, cardamom, ginger and salt. Mix on low for 10 seconds, increase the speed and beat for one more minute.
  3. Turn off the mixer and add the eggs and vanilla. Beat until fluffy and silky.
  4. Remove the crust from the freezer and pour the filling. Smooth the top with a spatula. Bake for 30 minutes.
For the topping
  1. Meanwhile, in a medium bowl whisk the sour cream, sugar, vanilla and salt. Remove the cheesecake from the oven. Carefully, spoon the topping on the hot cake. Use a spatula to smooth into a thin, even layer. Bake for 40-45 minutes or until the top looks set.
  2. Cool the cheesecake at room temperature. Refrigerate for at least 6 hours before serving.

Para la corteza
  1. 84 gramos (2.96 oz) mantequilla sin sal, derretida
  2. 2 cucharadas de azúcar
  3. 213 gramos (7.51 onzas) galletas María finamente molidas
Para el relleno
  1. 454 gramos (16 onzas) queso crema, temperatura ambiente
  2. 250 gramos (8.83 oz) azúcar
  3. ½ taza cacao en polvo
  4. ½ cucharadita canela molida
  5. ¼ de cucharadita cardamomo molido
  6. ⅛ cucharadita jengibre molido
  7. ⅛ cucharadita sal
  8. 2 huevos
  9. 1 cucharadita extracto de vainilla
Para la cobertura
  1. 200 ml (6.76 fl oz.) crema agria
  2. 2 cucharadas azúcar
  3. ½ cucharadita extracto de vainilla
  4. ⅛ cucharadita sal
Para la corteza
  1. En un tazón mediano mezcla la mantequilla derretida con el azúcar y las migas de galletas María. Presiona con firmeza y de manera uniforme, sobre la parte inferior y una tercera parte de los lados, de un molde con resorte de 20 cm (8 pulgadas). Congela la corteza durante 30 minutos.
Para el relleno
  1. Precalienta el horno a 190°C (375°F).
  2. En una batidora de pie con el aditamento de pala, bate el queso crema a velocidad media hasta que quede esponjoso, unos 2 minutos. Raspa los lados y añade el azúcar, el cacao, la canela, el cardamomo, el jengibre y la sal. Mezcla a velocidad baja durante 10 segundos, aumenta la velocidad y bate por un minuto más.
  3. Apaga la batidora y añade los huevos y la vainilla. Bate hasta que quede esponjoso y sedoso.
  4. Saca la corteza del congelador y vierte el relleno. Suaviza la parte superior con una espátula. Hornea durante 30 minutos.
Para la cobertura
  1. Mientras tanto, en un tazón mediano mezcla la crema agria, el azúcar, la vainilla y la sal. Saca el pastel del horno. Con cuidado, vierte la cobertura con una cuchara sobre el pastel caliente. Usa una espátula para alisar y formar una capa fina y uniforme. Horneaa durante 40-45 minutos o hasta que la parte superior se ve cuajada.
  2. Enfría el cheesecake a temperatura ambiente. Refrigera por lo menos 6 horas antes de servir.
  3. ¡A disfrutar!
