Decadent Chocolate Silk Pie

For the crust
  1. 190 grams (6.7 oz) graham crackers crumbs (I used Maria cookies)
  2. 1 Tablespoon sugar
  3. ½ teaspoon ground cinnamon
  4. 2- 2½ Tablespoons almond milk
For the filling
  1. 80 grams (2.82 oz) vegan butter
  2. 185 grams (6.5 oz) dark chocolate
  3. ½ cup white sugar
  4. 1½ cup freshly brewed espresso
  5. 340 grams (12 oz) extra firm silken tofu (preferably organic)
  6. 2 Tablespoons cornstarch
  7. 1 teaspoon ground cinnamon
  8. ¼ teaspoon cayenne peper
  9. ¼ teaspoon salt
For the ganache
  1. 1 cup almond milk
  2. 340 grams (12 oz) semisweet chocolate
Instructions
  1. Preheat oven to 180°C (350°F). Grease a 23 cm (9-inch) spring form pan. Line bottom of pan with parchment paper. Wrap 3 layers of aluminum foil around the bottom outside of the pan, bringing foil to top of rim.
For the crust
  1. In a medium sized bowl, combine the cookie crumbs, sugar and cinnamon. Add the almond milk and mix until it has a grainy texture, like wet sand. Press the crust firmly and evenly into the bottom of the spring form pan. Bake for 10-12 minutes, or until firm and golden brown. Allow to cool completely on a wire rack before filling.
For the filling
  1. Melt butter in large saucepan over low heat. Add chocolate and whisk until smooth. Whisk sugar and coffee; cool slightly.
  2. In a food processor, pulse the tofu with the cornstarch, cinnamon, cayenne pepper and salt. Add the chocolate mixture and pulse until well blended.
  3. Pour batter into the prepared pan. Place spring form pan in a large roasting pan. Add enough water to the roasting pan to come halfway up the sides of the cake pan. Bake the cake for 45-50 minutes, or until the center no longer moves when the pan is gently shaken. Remove from water bath; transfer to a rack. Cool completely in the pan.
For the ganache
  1. In a medium saucepan, bring the almond milk to a simmer over medium heat. Remove from heat. Add chocolate and whisk until smooth. Pour over the top of cake, still in the pan. Gently shake pan to distribute ganache evenly over top of cake. Refrigerate cake in the pan until ganache is set, about 2 hours.
  2. Run knife around pan sides to loosen cake; release sides.
  3. Enjoy!

Para la corteza
  1. 190 gramos (6.7 onzas) galletas María, pulverizadas
  2. 1 cucharada azúcar
  3. ½ cucharadita canela molida
  4. 2- 2 ½ cucharadas leche de almendras
Para el relleno
  1. 80 gramos (2.82 oz) mantequilla vegana
  2. 185 gramos (6.5 onzas) chocolate amargo
  3. ½ taza azúcar
  4. 1½ taza espresso recién hecho
  5. 340 gramos (12 onzas) silken tofu extra firme (preferiblemente orgánico)
  6. 2 cucharadas maicena
  7. 1 cucharadita canela molida
  8. ¼ cucharadita pimienta
  9. ¼ cucharadita sal
Para la ganache
  1. 1 taza leche de almendras
  2. 340 gramos (12 onzas) chocolate semi amargo
Instructions
  1. Precalienta el horno a 180° C (350 ° F). Engrase un molde con resorte de 23 cm (9 pulgadas). Cubre el fondo del molde con papel para hornear. Envuelve 3 capas de papel de aluminio alrededor de la parte inferior exterior del molde.
Para la corteza
  1. En un tazón mediano, combina las galletas, azúcar y canela. Añade la leche de almendras y mezcla hasta que tenga una textura granulada, como arena mojada. Presiona la corteza firme y uniformemente en el fondo del molde. Hornea durante 10-12 minutos, o hasta que esté firme y dorada. Deja enfriar completamente sobre una rejilla antes de llenar.
Para el relleno
  1. Derrite la mantequilla en una olla grande a fuego lento. Añade el chocolate y bate hasta que quede suave. Bate el azúcar y el café; enfriar un poco.
  2. En un procesador de alimentos, pulsa el tofu con la maicena, canela, pimienta de cayena y la sal. Añade la mezcla de chocolate y pulsa hasta que estén bien mezclados.
  3. Vierte la mezcla en el molde preparado. Coloca el molde en una charola profunda grande. Agrega suficiente agua a la charola, debe de llegar a la mitad de los lados del molde. Hornea el pastel durante 45-50 minutos, o hasta que el centro ya no se mueva cuando agites ligeramente el molde. Retire del baño de agua; transfiere a una rejilla. Enfría por completo en el molde.
Para la ganache
  1. En una olla mediana, pon la leche de almendras a hervir a fuego lento, a fuego medio. Retírala del calor. Añade el chocolate y bate hasta que quede suave. Vierte sobre la parte superior del pay, todavía en el molde. Agita suavemente el molde para distribuir el ganache de manera uniforme sobre la parte superior del pay. Refrigera en el molde hasta que el ganache cuaje, aproximadamente 2 horas.
  2. Pasa un cuchillo por los lados del molde para aflojar el pastel.
