La receta la vi hace un tiempo en el último libro de Nigella, y me encantó la idea de agregarle cardamomo al tradicional pan de plátano. Pienso que no hay nada más casero como un pan de plátano. Ingredients
  1. 268 grams (9.45 oz) all-purpose flour
  2. 162 grams (5.71 oz) muscovado sugar
  3. 2 teaspoon cardamom powder
  4. 1 teaspoon baking soda
  5. ½ + ⅛ teaspoon baking powder
  6. 2 medium ripe bananas (approximately ¾ cup mashed)
  7. 2 eggs
  8. 1 teaspoon vanilla extract
  9. ¾ cup + 1 Tablespoon buttermilk or natural yogurt
  10. ½ cup light olive oil
  11. 45 grams (1.6 oz) dark chocolate chunks
Instructions
  1. Preheat the oven to 180°C (350°F). Lightly butter and flour one 23 × 13 × 7.5 cm (9x5-inch) metal loaf pan.
  2. Combine the flour, muscovado sugar, cardamom powder, baking powder and baking soda in a medium bowl. Whisk the ingredients well to combine.
  3. In the bowl of a stand mixer, mix the bananas on low speed with the stand mixer’s paddle attachment. Add the eggs one at a time, mixing until smooth between each addition. Add the vanilla extract. Add the buttermilk or natural yogurt, and the olive oil. Scrape down the sides of the bowl, and mix until blended.
  4. Stop the mixer and add half the flour mixture. Mix on low speed until the flour drifts are almost gone. Repeat with the remaining flour and continue mixing until smooth, scraping the bowl to make sure the batter is even. With a silicon spatula fold in the chocolate chunks by hand.
  5. Spread the batter in the pan. Smooth the top of the batter. Bake for one hour or until golden browned and a toothpick inserted into the center comes out clean.
  6. Let to cool in the pan for 10 to 15 minutes. Turn it out onto a rack and flip right side up to cool completely.
  7. Enjoy!

Ingredients

  3. 2 cucharaditas cardamomo en polvo

  6. 2 plátanos medianos maduros (aproximadamente ¾ taza de puré)
