“Dulce de limón” Ice PopsWith this recipe I got off the healthy wagon. Sometimes you have to eat something delicious without thinking much about the “healthy” part. Besides, just three days ago, on May 6th, the world celebrated the International No Diet Day. When I heard about it on the radio, I thought it was a joke from the speaker, but I made some research and apparently it’s a big thing. The purpose is to promote a healthy lifestyle and raise awareness of the dangers of extreme dieting. “Dulce de limon” Ice PopsDulce de limón (Sweet lime dessert), is one of the most traditional and easy to prepare desserts in Mexico. Do not know anyone who does not like it. You only need fresh lime juice, a can of evaporated milk, a can of condensed milk and Maria cookies. You blend all the ingredients, except the cookies. Starting with a layer of cookies, followed by a layer of the lime-milk mixture, you fill a Pyrex and let it refrigerate for a couple of hours. That’s it! Very similar to the Chocotorta. For this pops, I used the same ingredients of the Dulce de limón in order to get the same taste. “Dulce de limon” Ice PopsMaria cookies are a staple in any Mexican pantry. They are a super thin, crispy cookie with a toasted flavor. I’m not sure if you can find Maria cookies in Latin America, but I do know that you can certainly find them in Spain.  “Dulce de limon” Ice PopsAlthough it seems an odd mix, milk with lime, the result is a popsicle with a sweet-soury taste … Delicious! Besides they are super creamy, which I really like. The cookie layer adds an appealing crunchiness. I wasn’t sure where to place the cookie crumbles; at the top or at the bottom of the ice pop. So I make the two versions. Personally, I prefer the ones with the cookie crumbles at the top of the ice pop (in the bottom of the plastic cup), because when the cookie mixture is at the bottom of the pop, it’s harder to eat it without falling cookie crumbles. You can make them however you want. “Dulce de limon” Ice PopsI think I just found a dessert that will be requested constantly in my house, especially in the hot spring/summer months. And it tastes exactly like the traditional Dulce de limón… adding a lot of memories.

  1. 100 gr (3.5 oz) graham cookies (I used Maria cookies)
  2. ¼ teaspoon ground cinnamon
  3. 1 tablespoon unsalted butter, melted
  4. 1 can (378 gr) evaporated milk
  5. 1 can (397 gr) condensed milk
  6. ½ cup water
  7. ½ cup freshly squeezed lime juice
  1. Arrange 14 plastic cups on a small baking sheet.
  2. Add the graham cookies to a blender or a food processor, and blend until fine crumbs. Transfer to a small bowl and whisk the cinnamon. Add the melted butter and with a fork whisk very well. Reserve.
  3. Blend the evaporated milk, condensed milk, water and lime juice, until well combined.
  4. Placed about a tablespoon of the crumb mixture into the bottom of each cup and press well. (If desired, you can fill the cups with the milk mixture first and then add the cookie crumbs). Divide the milk and lime mixture evenly among the plastic cups. Place the baking sheet in the freeze, and freeze for 2 hours. When the milk mixture is slightly frozen, insert a craft stick into the center of each cup; it has to stand up straight. If it falls, let freeze for a little longer.
  5. When ready to serve, gently pull each ice pop.
  6. Enjoy!
